I followed other reviewers recommendation of using two whole eggs and the recipe turned out perfectly. Although, I made one log instead of two -I don't really see how this recipe would have made two logs unless the biscotti were tiny. The dough was sticky, but I was fine just wetting my hands. I had no problem cutting the biscotti - I think it probably has to do with using the right knife.
Overall, this recipe is wonderful and I would make it again tomorrow!
