Caribbean Coconut Chicken

Delicious! My husband who grew up in Hawaii raved. I gave it 4 stars because it was not a hit with the kids and they ended up leaving it on their plates. I also would watch the timing very carefully. 45 minutes was way too long. My chicken was just right after 30 minutes...I could have even gone 25 and been fine. Perhaps I fried it too long but in any case - be careful to check it often!

Cottage Cheese Chicken Enchiladas

This was good - but not to die for! I prefer other recipes on this site for Chicken enchiladas. I did however like the addition of the cottage cheese and I am going to try adding that to a different recipe for chicken enhiladas on this site. I think the difference for me was the enchilada sauce - I think I prefer the soup mixtures that you will find in other recipes here. The meat filling was yummy! I will use THAT and a different soupy sauce with cheese grated on top.

Raspberry Streusel Tart

I am going to give this a better rating cuz I could tell it WOULD have been great had I not slaughtered it. Part of the reason I messed up though was my shopping list did not have some of the detail needed. Because of this and for other reasons - I made some substitutions. I also was not thinking and when the recipe called for preserves in the pot - I was (stupid me) thinking rasberries...not the jam! DUH! ok..but despite some mashed rasberries that I layered with (and by the way - I think I liked that boo boo cuz it did not affect it much and then I was not jamming the topping into the rasberries so that it would stay put - it layered nicely. (I will do that again (break up the rasberries a bit) The other thing to consider is the cost of rasberries of that amount - I paid $15.00 for my rasberries at 2.99 a container that had a little over a cup. Marie Calanders would have been less expensive!!! This is also a lot of work. But anyway..in the end - I could read through the lines and think..." This WOULD have been delicious but pricey! I also used Cherry extract instead of the kirshwasser - I have no idea how different that made it - but like I said the flavor was good - so that item worked for me. Good luck...I will probably try it again!

Tantalizingly Tangy Meatloaf

Believe it or not - we had a meatloaf contest. Each memeber in my family made one recipe. Two came from this site - and this was the overall winner! I did find the pineapple preserves in a regular store after searching 3 others. I finally went home and called around - so I would suggest doing that first. I used the meatloaf base from the meatloaf recipe under the HALL OF FAME recipes on this site and used the sauce from this recipe. HEAVENLY!!!! You have to try it!

Kickin' London Broil with Bleu Cheese Butter

Definitely one of my favorite recipes I have made to date (about 200 and counting!)(so that is saying a lot!) I used Montreal Steak Seasoning to season my meat and then a slow BBQ over the grill. The blue-cheese butter was wonderful. It was SOOO good - I tushed out with a bite and said to the hubby " You have got to taste this - it is awesome!!!" He agreed and we savored every bite! Not only a keeper - but I might NOT tell everyone where I got the recipe this time!

Beef Stroganoff III

I actually liked the flavor better BEFORE the wine - but it was great nonetheless. I think next time - I will leave it out. I also will cut the meat into smaller strips than called for. It was good though!

Tangy Chicken Fajitas

This was really good. I made it while on a camping trip. I did not really drain the marinade like I should have and it ended up in a sort of soupy mix at the bottom of a big pot on a camp stove...in other words I almost boiled it in the marinade that I did not drain completely. It actually turned out great that way - believe it or not! We all all the trimmings and the fajitas were great! I used all the vinegar called for and I liked the spicy tangy flavor.

Slow Cooker Chicken Continental

I rated this once and then came back to rate it again. I first gave it 5 stars then came back and gave it three. You see...I make this and have for years. I make it by taking regular chicken breasts and lining a 9x13 pan and mixing one can of soup and a small carton of sour cream and covering the top. Sometimes I line the bottom of the pan with "buddig" beef. (the little packages in the packaged meat aisle) At first I gave it 5 stars but then after I fed it to my family - they all thought the crockpot version was not as good as the regular oven version I make. (not sure why but it turned out much juicier in the fast method. I also wrap a slice of bacon around each piece of chicken when I am using it for company or if I have bacon in the fridge - I then bake it for 45 minutes on 400 - For me - this turns out better and the family agrees. Perhaps I cooked it too long - but I took it off way sooner than the recipe called for already - so watch the time - or it will dry it out.
