I work fulltime, attend school parttime, and have 2 small children. I am always looking for ways to make good, quick meals.
My favorite things to cook
My favorite is Absolutely Ultimate Potato Soup. My husband's favorites are Grandma's Egg Custard Pie and Chili Beef and Corn Biscuits.
My favorite family cooking traditions
My kids love to help out in the kitchen. We spend a great deal of time in there together, whether cooking dinner or baking bread and cookies.
My cooking triumphs
My husband has a very large family, so when they are over I have around 20 for dinner. One evening I heard my nephew telling his girlfriend that it was fine to try whatever I was serving, because it would all be good since I had made it.
My cooking tragedies
The first time I fixed cube steaks for my husband, boyfriend at the time, the lid came off the pepper as I was using it. I had a mess! It mixed with the gravy and formed a paste. Luckily we were able to scrape most of it off and still have a decent dinner.

Chicken Noodle Casserole
My family loved it! I added a little less onion than called for, but, based on the other reviews, added a little more spice. I used about 1/2 tsp of Italian blend seasoning as I combined the other ingredients, and a about 1/2 tsp of poultry seasoning as I poached the chicken breasts.

Corn Dog Muffins
I used honey cornbread mix, so I left out the brown sugar. Followed the recipe otherwise and my family loved it.

The Best Rolled Sugar Cookies
Absolutely fantastic!! Ran short on time and used my PC middle scoop, then stamped out the cookies. Not crumbly or dry like so many sugar cookies. Didn't even use icing and they tasted terrific. Thanks!
