Butternut Squash Bake
This was AMAZING! The only change I made was that I used crushed corn flakes & Italian seasoning instead of seasoned bread crumbs and did not add salt & pepper. This is SO good that my husband and kids immediately asked if I would make this again. Thank you!

Black-Eyed Peas and Tortillas
This is another favorite in our home. I use a pound of dried black eyed peas, soak them, cook them, and then adjust the recipe accordingly. We each eat 2-4 of these for dinner, then have leftovers for a couple days. (They are even better the next day!) I've made them with & without smoke seasoning. I like them with, but it is great either way. I also choose to use corn tortillas, but again that is just a personal choice. (If you DO use corn tortillas, you need to heat each of them on a very hot skillet before using them.)

Lentil Chili II
This is, without a doubt, some of the BEST chili ever! I've made this for our family, as well as two potlucks. There wasn't a drop left at the potlucks! Kids and adults both were eating it up and getting seconds. (I like to spice it up a bit more, but when I am cooking for a crowd I keep it right as the recipe and put a bottle of chipotle tabasco next to the the pot.) I've had several people who tell me that they "don't like lentils" try this and love it. I've given the recipe out many times! This is a regular now in our home!
