Six Can Chicken Tortilla Soup

This is a delicious soup and it was SO easy to prepare! I followed the recipe but added cumin, garlic powder and some dried onion. The soup was very salty so I'll use low sodium broth next time. I made baked corn torilla chips to serve with the soup. Delicioso! A definite keeper.

Chicken Enchilada Soup II

My best friend and I have recently started doing "Once A Month Cooking" sessions. I added this recipe to our cooking day last month and it was a HUGE hit with both families. It is incredibly simple to make, tastes delicious and freezes beautifully. We doubled the recipe...next month we'll be making a quadruple batch!

Mexican Layered Dip

I make this recipe for summer get togethers and my guests always love it! You can solve the guacamole browning problem with a light squeeze of lime juice...a trick I picked up on a trip to Mexico. Works like a charm and gives a nice tangy bite to the dip.

Fruit Dip I

This dip is a great treat for toddlers! My two-year-old son isn't a big fruit eater but, like most toddlers, he loves to dip anything. I cut back on the marshmallow fluff so he isn't getting so much sugar! It's one of his favorite treats!

Garden Chicken Stir Fry

Delicious! I was looking for a quick and light recipe to make on warmer evenings. This dish uses many of my favorite vegetables and the pecans give a wonderful sweetness when paired with the Vadalia onions. A must try dish!

Italian Meatball Sandwich Casserole

My friend made this casserole for me after I gave birth to my daughter. It was absolutely delicious! I make two batches at a time...one to eat right away and one to freeze for hectic weekends. Freezes beautifully!
