Big Batch Kris Kringle Cookies

Great recipe! I always love the combo of white chocolate & cranberries--the TOASTED pecans are a great addition. Other than using Nestle Christmas-colored swirl white chips, I followed the recipe and ended up with some great-tasting AND great-looking cookies. Hopefully they survive their 2-day shipment to the recipients =) as I know they will be a hit!

Teena's Spicy Pesto Chicken and Pasta

Yum! What a good blend of flavors! I was excited to have a use for some homemade pesto that's been in my freezer... I really enjoyed this dish! A nice level of heat from the hot chile paste, creating a deeper flavor with the blend of pesto, cheese, and cilantro! Great dinner that comes together quickly!

Black Beans with Bacon

Bacon really does make everything better...wow! I opted to use a can of beans to make my life easier and I skipped the parsley (my only recipe this week that called for it). Other than that, I pretty much followed the recipe and, again, WOW! I used naples tip of adding cumin and I think it definitely adds a little more depth to the dish...just a light sprinkle, to taste. I cannot wait for lunch!

Coffee Bonbons

If you enjoy the flavor of coffee...and even more with chocolate, you will love these treats! I followed the cookie recipe as written--only refrigerating the dough for about 20 minutes. Using a small cookie scoop, this was a quick process that yielded great, delicate treats! I like how they crumble and melt in your mouth. The addition of chocolate is amazing! I didn't have unsweetened chocolate so I just melted chocolate chips with butter...and threw in some extra instant coffee. These are awesome!!

Crunchy Peanut Butter Balls

5 stars for easy, 5 stars for taste. What a fun addition to a plate of goodies, or just a special treat for kids & adults! I nuked the PB & marshmallow cream for about 30 seconds to help them incorporate a little better...then I found it easier to mix. **TIP, I used a small cookie scoop to form the balls, then refrigerated for a few minutes...such a snap! I jazzed some up a bit using a tube icing and some sprinkles. Woo hoo!

Ultimate Maple Snickerdoodles

oooh, so yummy! Very much like your favorite snickerdoodle: buttery, tender, slightly chewy treat...with a hint of maple. Amazing! I found maple sugar for $14 at Whole Foods, but was MUCH more than I needed. Ended up finding/buying at a small farmers market. It adds a nice light crunch, a little texture, and nice extra hit of maple. If you really can't find maple sugar, at least sprinkle with Turbinado or Sugar in the Raw. Next time I might do more maple syrup in the batter; I love maple! Enjoy!!

Classic Waffles

Name says it all: classic waffle. No extras here - but a great way to play up the flavors of a sauce or syrup or other topping. This worked well to do half whole-wheat flour. Also, opted for oil instead of butter. Nice go-to recipe for basic waffles.

Lower Fat Banana Bread I

I was really impressed! This has been sitting in my online recipe box for quite awhile now... such a shame! I used butter instead of margarine and used apple juice instead of water (more flavor?). I also made into muffins and dotted with some chocolate chips for fun. (Healthy additions, I know!) =) Final result was a great muffin - perfectly peaked, moist and delicious! Great banana flavor!

Snickerdoodle Chex® Mix

WARNING!! Highly addictive food item. =) I made exactly as written. Turned out to be a great snack to munch on - everyone really enjoyed it! The flavors really did remind us all of the scrumptious snickerdoodle cookie! This would be a fun recipe to make to give out to some coworkers as a small homemade holiday gift... especially since I still have LOTS of cereal left =)

Cinnamon Bread I

Really not a fan. Not what I expected from a cinnamon bread recipe - especially one that included buttermilk (which tends to lend a more moist texture to the bread). Following the recipe exactly yielded a sub-par bread that leaves me searching for another one to use for next time. Heavy and dry - not sweet, moist and delicious as I hoped.

Harvest Pumpkin Brownies

Yuuuuuuuuuuuuuuummy! <--Sing-song voice =) While the title is deceiving (I'm a sucker for brownies), I realized it wasn't going to be brownie-like after reading the reviews. *On to the recipe: I normally will modify this or that. I didn't. I went with the recipe and it was perfectly executed... using a 9x13 and 9x5 pan (no 15x10). I was worried there wouldn't be enough frosting for the two, so I added just 3oz extra cream cheese and it was plenty. Perfectly moist; wonderfully spiced; perfectly pumpkin-y. In the small pan, I did add some chocolate chips, as I know some people LOVE that combo... sure enough! What a great find!

Buttermilk Chocolate Bread

On technicality, it should be a 4 for being called a bread... this is basically a cake dressed as bread. =) Absolutely wonderful chocolate flavor. Here's something I added to enhance the chocolate flavor: 1 tsp instant coffee dissolved in 1 T hot water. Threw in a handful of chocolate chips... then decorated the top with a drizzle of white chocolate. Over the top decadence you wouldn't necessarily expect from this recipe!

Buttermilk Cinnamon Bread

Heavy, drier texture... not what I expected from a cinnamon bread, especially with buttermilk. Following the recipe yielded a pretty-looking bread, but not really worth eating if you're watching your caloric intake... I'll keep looking.

Brownie Frosting

Heavenly. Decadent. Irresistably chocolate frosting (who would WANT to resist anything chocolate anyways?!) =) This is SO quick and easy to make. I love the beautiful sheen it leaves covering my brownies. I easily covered two 8x8 pans of brownies and had enough left so I coated some pretzels...still had some left. It's that insanely good, I would've eaten it with a spoon. =)

Sunflower Oatmeal Cookies

I like the unique flavor the sunflower seeds lend this traditional oatmeal cookie! Nutty in a way that peanuts, walnuts, pecans, etc cannot provide - I enjoyed the change! I think they would be great with chocolate covered sunflower seeds, as some reviewers suggested. I didn't realize I ran out of coconut, which I'm sure would be tasty too! --A great oatmeal cookie recipe overall; I enjoyed the chewiness that they have maintained in the container. Give it a shot! (PS: I used roasted unsalted seeds... so I added about 1/2 tsp salt to compensate.)

Oatmeal Raisin Cookies

YUM! I love that they are still super tasty this morning =) They maintained a crisp edges, yet chewy centers. I used butter and added some Craisins in with the golden raisins to give it a splash of color, subbed pecans for walnuts...and just a white chocolate chip or two on top of each for fun! These will go fast at work today, I am sure! --I refrigerated some of the dough when I was half way through and they stayed a little puffier, so that may be something to consider, depending upon how you want your cookies to turn out.

Tomato Bread

MMMMMMM!!! This bread is hard to resist once you eat your first slice... such an incredible, fun flavor! Definitely reminiscent of pizza with the flavors of basil and oregano bursting into each bite. Other than using V8 veg juic in place of regular tomato juice, I follwed this exactly...using just over 6 cups of flour. It baked perfectly in just under 30 minutes. I can't wait to wait at least a few more minutes to go for another slice... even plain! This one is a keeper!! --Also, reminds me of the Tomato Basil bread at Panera. ENJOY!!

Broccoli with Garlic Butter and Cashews

Great recipe - makes me wonder why I don't eat broccoli more often =) I would have to agree that there is tooooo much butter. Next time will reduce quite a bit... and let it boil longer so it thickens more. Love the cashews; but easily could substitute sliced almonds if you don't have cashews. --The soy sauce made me think "Asian" but I didn't get that at all...it would be a perfect complement to any meal.

Maple-Balsamic Vinaigrette

GREAT dressing! This came together quickly--decided to use this rather than a bottled cranberry walnut vinaigrette... glad I did! Tasted awesome with arugula, chopped pecans, cranberries, sliced apple, and a bit of parm cheese. Wonderful blend of flavors - I recommend mixing lettuce and ingredients to coat and then serving onto plates... much better results.
