I am the Owner and CEO of The Comfort Kitchen, a Personal Chef Service.I am also a Surgical Technologist at a busy Hospital in Newport Beach, CA. I am married with 6 children.
My favorite things to cook
I specialize in Comfort Foods, you know, the foods that just make you FEEL good! Meatloaf and Mashed Potatoes, Chicken Fried Steak, Macaroni and Cheese. Anything Southern, Creole/Cajun or just Good old Soul Food is what I like to cook.
My favorite family cooking traditions
My family used to have large gatherings on major holidays. A different home for each of them. And you could always count on a big pot of Gumbo, some Collard Greens and of course Cornbread.
My cooking triumphs
I made my first Prime Rib Roast last Christmas and it was DIVINE. It was tender and falling apart...it just came out way better than I expected!
My cooking tragedies
I am NOT a very good baker, for some reason. I like to do everything from scratch and somehow it just never comes out how I want it to be!

Candied Yams
Candied Yams is one of the few dishes that I actually prefer with canned items. I have tried to make this soul food staple in the past and always ended up with a soggy mess. Thank you to the reviewers who said to DRAIN THE CANS before using them! This came out PERFECT! I remembered the cinnamon after I had already layered the marshmallows(big ones, BTW) so I just sprinkled it on top. Wonderful! Just like my Granny's!

Penne and Vodka Sauce
This was easy and delicious! Changes: My local store didn't have any pancetta, so I used prosciutto instead. Also, I just eyeballed the amounts and added red chili peppers and shrimp to the sauce. Delicioso!

Italian Chicken with Garlic and Lemon
This was absolutely delicious! I made it exactly as written and my family loved it! Correction: I DID brown the chicken first, to give it a nice fond, but otherwise I didn't change anything. Very good, I will make this again!
