Poor Man's Sandwich

I have eating this sandwich forever but w/o the onion. Sometimes I add bacon bits--Yum!!!

To make this recipe a bit easier to put togeather, I boiled the cabbage and the pasta (I used pasta shells)in the same pot, and I didn't saute the onions (less fat). I also added some frozen peas and garlic to the mix. Yummy.

Sweet Pea Mockamole

I can't believe how good this recipe taste. I've made Mockamole before, but the recipe called for canned Asparagus instead of sweat peas, it was awful. This recipe is truly amazing.

Mock Chopped Liver

At first I was a little bit leery about this recipe, but once I tasted it, I knew it would be a hit at our next potluck. Sure enough, I was right, everyone loved it. However, being a garlic lover, I did add some garlic to it.

Baba Ghanoush

While many Baba Ghanoush recipes do not call for yogurt, it is not that uncommon either. I enjoyed this dip. However, being a garlic lover, I did add a bit more garlic.
