Baked Cream of Coconut

Outstanding! Don’t underestimate the plain look of this most delicious dessert with a crisp top layer and a flan-like inside. It was very easy and quick to make.

Apricot Lentil Soup

Wow, both hearty with a hint of sweetness – just delicious and healthy. I wouldn’t change a thing. To peel the tomatoes easier, I cut a shallow X in the bottom end of each tomato (opposite side of core) and dropped them in a pan of boiling water for 15 seconds and then transferred the tomatoes into a bowl of ice water. I then immediately peeled the tomatoes with a paring knife and the skin just came right off.

Slow Cooker Chicken Taco Soup

This was very delicious and simple to make. I gave it 4 stars only because I did not think it has an authentic "Mexican" taste. Perhaps adding a little cilantro near the end of cooking time would make it more authentic tasting. Next time I will do this. Thanks for the recipie!

Red Skinned Potato Salad

I only rated this recipe two star because the flavor was very bland. I took other reviews suggestions of adding mustard (1 heaping tbsp) and about equal amount of vinegar. This definatevely made it more tasty. I will definitevely make again, but with mustard and vinegar. Chopped pickles might even make it more flavorful.

Honey Mustard Sauce

Very Good and quick to make. I heated the sauce in microwave for just a few seconds and spead it on sandwich buns and made honey-dijon marinated chicken breast sandwiches. Thanks.

Creamy Pesto Shrimp

Loved this! Awesome but good thing I took the advice of other reviewers and used half & half cream and cut the butter in 1/2 'cause it was still pretty rich. I also added sliced black olives, capers, quartered artichokes, sun dried tomatoes and a little fresh lemon juice. My husband requested I make this one a week. Yeah Right!

Mango Tango Black Bean Salsa

Chiles en Nogada (Stuffed Poblano Chile Peppers)

This recipe is just out of this world! It really is an extraordinary blend of flavors. I've had a similar dish at San Angel Inn at Walt Disney World Epcot Resort. It was made with pork instead of chicken. I was told that this dish is normally served warm or at room temperature and pomegranate seeds are added for garnish. Next time I make it, I will add the pomegranate seeds - it really adds to the texture.

This was pretty good. It reminds me of a fresh version of sweet pickles. This is good as a side salad. I used red onions just to live-up the dish with color.

Fresh Salsa I

Caution! This recipie is spicy!!! I only used 2 jalapenos. So if you like things hot this is the one. I added cilantro to add a little color and authentic flavor. Thanks for sharing.

Great Mac and Cheese

Unfortunately, I did not like the cheese sauce. It was bland, pasty and gritty. All my ingredients were fresh, though. I just don't understand what happened? I agree with another reviewer that perhaps omitting the flour might change the texture for the better. It also made more sauce than needed. For what is worth my husband had seconds. Thank you anyway George for sharing.

Rempel Family Meatloaf

This meat loaf recipe was absolutely scrumptious! If you’re looking for a traditional tasting meat loaf that’s quick and easy, this is the recipe you need. It’s very flavorful and moist, yet not overpowering to the palate – giving it a real home-cooked taste. Since I did not have on hand “buttery crackers,” or onion soup mix, I substituted with round wheat crackers and used about ¼ cup of Frenchy’s French Fried Onions (crushed) with 2 tsp of onion powder. I served it with mashed potatoes & gravy, broccoli spears and carrots with a Monterey Jack cheese sauce. My husband & I loved it. Thank you for sharing!
