Mediterranean Lentil Salad
I love this! The only changes I made were; I used chicken broth (no salt/msg & fat free) instead of water and added extra celery at the end. The lentils took approximately 30 minutes to cook and I added extra broth 1/2 way through the cooking time.

Oven Roasted Potatoes
We really like these. I am generous with the spices and I do not peel the potatoes. I mix the spices in a small bowl. Separately, I put the cut potatoes in large bowl and stir them with the olive oil (more than 1/8 cup) to coat. Then I put the spice mixture in the bowl with the potatoes and stir until thoroughly coated. Put them in the oven until they are crispy. Very tasty!

Simple BBQ Ribs
This is the only recipe I use for country style pork ribs. The recipe works whether you have 2 pounds or 5 pounds. I always use approx 1 bottle of sauce. We like our ribs saucy. Always tender and tasty!
