Simple Ranchy Breaded Fish Fillets

I made this for a friend for lunch yesterday and she loved it. Great timing on the recipe as I had some frozen tilapia and she had mentioned that she'd never had it. I followed some of the other reviews and tried to "lighten" the recipe. I used the crumbs mixed with some dry ranch dressing, dipped the fillets in skim milk then the crumbs, baked for 25 minutes at 350 and they were perfect, nice and moist! Even better than my old recipe that I've now thrown out. Thanks!

Simple Cauliflower Soup

Perfect! I did a search using cauliflower, potatoes and milk as we were cleaning out our fridge in anticipation of a holiday and I had this big head of cauliflower to use up. Made this soup, pureed with a wand blender in the pot, and we had it with a bit of garlic cheese toast. Only added more pepper and tabasco. Great & easy keeper! Thanks for not having to throw out a whole head of cauliflower!

Spinach Quiche

Made this for a late supper, added 1/4 finely chopped onion, used a mixture of mozzarella and cheddar cheese & omitted the croutons because I'm not a fan. I sprinkled freshly ground black pepper and fresh nutmeg on top. Baked it for the full time & then let it rest for 10 minutes before cutting. Now I wished I'd taken a picture because it was picture perfect, but we were hungry! DH said it's a keeper and I can make it again anytime. Easy, too!

Seared Ahi Tuna Steaks

Made this last night and was leary of popping peppers but I watched them thru a glass lidded frying pan. Pretty neat. I think that the older the pepper, the less likely it is to pop as about half of mine popped. We like our tuna well done so I did it 3 minutes per side on med-high. A lovely dish that DH says is a keeper and to make again, anytime. I think I'll wait until it warms up here a bit though since my vent is frozen over and it's too cold to open the windows (-40 C/F) to get the smoke out! I would think that this would be good done in a cast iron fry pan directly on the BBQ coals, too.

Easy Garlic Broiled Chicken

I made this last night with 4 bone-in chicken thighs. Like a previous review, I thought it was way too much butter and just omitted it, spraying the thighs lightly with Pam. It worked really well and was still very moist and there was lots of juice off the chicken. I thought we'd love it but unfortunately it was just OK. Can't say as I'd be in a hurry to make it again because of the high fat and sodium content.

A Firefighter's Meatloaf

This is a huge recipe! Next time I'll put it in two regular loaf pans and freeze one. For the two of us, we have almost made ourselves sick of it this week trying to get the leftovers used up. Opted to use more salsa on top as BBQ sauce is not one of my favourite flavours. This is a great recipe and a keeper; thanks.

Pork Tenderloin with Dijon Marsala Sauce

We have just finished eating this marvellous dish! I made the fol changes. Sub dijon for grainy mustard, heavy cream for skim milk w/cornstarch. Omited oil, use nonstick frypan, brown meat THEN coat with mustard before roasting. Suggest making sauce well in advance and then reheating for company to prevent standing at the stove for 30 minutes.

Homemade Tomato Sauce I

In addition to my previous review, I dehydrated 4 cups of the sauce until it was the consistency of a fruit roll up. This made a very interesting gift for a visiting friend who is on a low sodium diet and is travelling by air. Folded and sealed in bags, there's no worry of a bottle breaking and sauce leaking during the flight.

Scalloped Potatoes and Onions

I really didn't think this would have much flavor but decided to give it a try based on other reviews. I added two minced cloves of garlic, otherwise I followed the directions exactly. Halfway during the baking process I remembered an appointment so I turned the oven off and restarted it an hour later. It turned out fine. DH loved it, said it was better than mine, so now it's our recipe, too! Even better as leftovers.Thanks.

Unbelievable Chicken

This sounds amazing and I have everyting on hand so this will be our dinner tonight. I plan on making it into mixed skewers for the BBQ as suggested; that should also shorten the marinading time as I don't have 8 hours left until dinner!

Stuffed Pork Tenderloin

Broccoli-Stuffed Sole

I have to tell you I've made this several more times lately, always to rave reviews. I've substituted plain rice for my own baked rice recipe which makes two large casseroles and then freezes easily in small portions. This is a great recipe! Thanks again.

Sky High Yorkshire Pudding

I made this Yorkshire pudding using 1 tsp lard (Yes, lard!) and preheated the lard until it started to smoke. This was a "must" from a friend from England. Even a 3 year old ate it and thought it was good. In my convection oven, 30-35 minutes was too long, even after turning the temperature down about half way through. More like about 20-25 minutes was perfect.

Garlic Prime Rib

I made this for our Boxing Day dinner and it was a hit! My roast was just over 10 lbs and 6 adults and 2 children pretty much demolished it! As I needed my oven to make Yorkshire pudding, also from this site, I took the roast out at 140F, tented it with tinfoil to rest for 30 minutes. Done perfectly. Many thanks.

Herbed Lamb Chops
