Maple Banana Bread
I double the maple extract to get more of a maple flavour, and add 1 tsp of cinnamon. Also usually use whole wheat flour instead of white.

White Chocolate and Cranberry Cookies
I have made these several times and they are always a hit. I have used Disarrono liquor, Grand Marnier, or vanilla instead of the brandy. I always cut the white sugar in half.

Trini Mango Cheesecake
I only made the topping since I bought a pre-made cheesecake, but it tasted great and was very easy.
