Oatmeal Whoopie Pies
Really great cookies. For the cream filling, I was able to cut back on the shortening by two tablespoons without sacrificing consistency. I also used rolled oats (not quick oats) and the cookies turned out just fine.

Spinach Brownies
Really great recipe! My twist is to add 1/2 to one teaspoon of dried italian seasoning blend, cut the amount of butter in half (and saute the onion in it), and substitute shredded parmesan for the mozzarella. I also serve with marinara for dipping. Big hit with adults and kids alike!

Caramel Crunch Apple Pie
This pie sounded so good and had many great reviews. I made it exactly as written, using McIntosh apples, but the finished product was very runny. I ended up draining off a lot of liquid before topping the pie with caramel and crunch, and it was still very runny and ultimately fell apart when I served it. The flavor was terrific, but the appearance and texture left much to be desired.
