About this Cook
Happily married with 2 beautiful kids.
My favorite things to cook
Boneless chicken!...my husband is picky about his meats and boneless chicken is what he prefers
My favorite family cooking traditions
When I was in elementary school (3rd or 4th grade), my dad got this awesome corn beef and cabbage bake recipe out of the newspaper for St. Patty's. My whole family loves it and we've been making it every St. Patrick's since :)
My cooking triumphs
My husband LOVES the Spicy Garlic Lime Chicken recipe I got off of this site, and I am now the unofficial "Potato Casserole Maker" of the family.
My cooking tragedies
well...i really need to invest in a timer (one that buzzes really loudly when done). i have this tendency to forget about what's simmering or baking (when i leave the room) until you smell it starting to burn...oops...

Best Big, Fat, Chewy Chocolate Chip Cookie
The only chocolate chip recipe that I use now. My husband LOVES these cookies and brags to everyone how great my cookies are! Thanks for a great recipe!

Bacon Potato Omelet
I followed recipe to a tee and it was a little too bland for me, but I love that it was super easy to make and I always have the ingredients on hand. I'll have to make it again sometime with some tweaking to give it a little more flavor.

Zesty Slow Cooker Chicken Barbecue
I made this tonight and the husband LOVED it. It's so good and such a simple recipe that uses ingredients I always have on hand. I used Kraft Hickory Smoked BBQ sauce and since it's a sweeter sauce anyway, only put 2 tbsp of brown sugar in. I used 3 thawed chicken breasts and cooked it on High for 3 1/2 hours. I ended up using a whole 18 oz. bottle of BBQ sauce, but that was because I knew that it was going to end up sitting on warm for awhile (my husband ended up having to work late last minute). This is a keeper!
