Big Soft Ginger Cookies

These are wonderful!! I followed the directions exactly the first time, and they turned out really good. This second time, I substituted 1/4 of the white sugar for brown, used 2 TBS of molasses, omitted the water, and substituted butter for margarin, and my family loved them even more! I use a 1 TBS dough scoop to get them the perfect size. I also take a orange juice glass, dipped in sugar, to lightly press them down. Next time, I'm going to try the orange juice as another reviewer suggested.

Peanut Butter Cookies IV

This is a really good, moist cookie recipe! There is one minor adjustment that I made - I turned the oven down from 375 to 350. At 10 minutes they will look slightly underdone. Let them cool for 3-5 minutes on the cookie sheet, then remove them to a cooling rack for another 10 minutes. Cookies always continue to bake after they're first pulled from the oven. This prevents over baked cookies! This is the rule I follow when making all cookies and it works every time.

Spicy Pumpkin Chili

This was really good! I made one minor change to ensure my family would eat it. I only used great white northern beans and black beans since my kids don't care for kidney. I drained the beans, and while the pumpkin pure thickens it nicely, it wasn't to thick. Also, I ended up doubling the ground beef and the seasoning as a result. I didn't find this to be sweet at all. Wonderful chili for something a little different!

Jerky Lover's Jerky - Sweet, Hot and Spicy!

this is fantastic!! I was surprised at the reviewer who didn't think it smelled good while dehydrating because my entire family kept begging to know when it would be done! The seasoning on this is just right - no to sweet, not to spicy - the perfect combination of both for a jerky.

My family and I love this tangy barbeque sauce! I've made it as the directions state, and it was good. When I made it the second time, I opted for 3 cups of tomato sauce and 1 cup of ketchup to cut back on the sugar. Both ways were excellent! I plan to use this on a roast in the crockpot to make barbecued beef sandwiches next. Yummy!!

Blueberry Coffee Cake I

I brought this to a mother/daughter tea today, and it received rave reviews! I was concerned that I didn't have enough batter to fill my bunt pan, but it turned out perfect. I also followed the previous advice to use 3/4 buttermilk and 1 1/2 cups of blueberries. This worked well for me. The cake was moist and yummy. I also used frozen blueberries, as that was what was available to me, and they worked just fine.

Spinach and Strawberry Salad

This was very good, and reminded me of the salad that is served with the grilled salmon at Mimi's Cafe. I did add a 1/4 cup of red wine vinegar for some additional flavor. Next time, I'll cut the sesame seeds back as that flavor was a little too prominent for me. I would also recommend doubling the dressing, as there was barely enough for our family of 7, particularly if you want leftovers! Overall, a very good recipe.

Easter Eggs

My family raved about these. My husband thought the coconut ones tasted like Mounds candy bars on steroids. My kids in peanut butter heaven over the others. I used a dough scoop that was approximately 2 TBS to get consistency in size, and this recipe made about a dozen of each. My family has asked that we make these every Easter from now on!

Sausage Mushroom Quiche

This is delicious! I made this for Easter morning. I loved that it made two pies and I was able to put them both in the oven at the same time. I didn't realize when I bought my pie crust that I bought deep dish crusts! So I cooked an extra half pound of sausage, another carton of mushrooms, and double the egg and cheese mixture. Since I wasn't planning to double (except for the mushrooms, since they always cook down so much) I didn't have enough of the heavy whipping cream so I substituted regular whipping cream, which worked just fine. I'll be using the regular whipping cream from now on. This dish was creamy and smooth. My husband asked that we eat this for more than just holidays!

Open-Faced Broiled Roast Beef Sandwich

My family LOVED this recipe. I should note that I used hoagie rolls, instead of the sliced bread that was called for. I also omitted the hot sauce - not intentionally, but I discovered I was out when I went to make these. I think the pepper jack cheese has more than enough pep and I will not be adding the hot sauce in the future. I used 24 oz. of sauerkraut and doubled the mustard, barbecue sauce. I was able to make 7 sandwiches out of this.

Fudge Truffle Cheesecake

WOW!!!!!!!!!!!!! This is an AMAZING, rich, chocolatey cheesecake!! I took this to a party at a friends house, and not a single crumb was left. Everyone was amazed that I made this from scratch.

French Onion Tomato Soup

This is fantastic!! I used V8 low sodium tomato juice for my base. The bullion has a lot of sodium already, and I wanted to make sure it wasn't to salty. I used 3 cloves of fresh garlic, that I minced and added to the onions when they were almost done. I also added just a dash of fresh cracked pepper. This was an amazingly tasty tomato soup!

Japanese Chicken Wings

These are FANTASTIC! I did add a little seasoning to the flour mixture (garlic powder and seasoning salt) and I basted the wings, rather than just pour it all in, but these were a hit with my entire family and not one wing was left!!

Spaghetti Carbonara II

I made this for a large crowd, and it was a HUGE hit! A nice change for spaghetti sauce and noodles. Kids and adults alike loved it! Definitely add the white wine for flavor though (we made it once at home without and we were disappointed).

Chicken Hurry

I made a few small changes: First, I used chicken legs instead of a whole chicken cut into pieces. I doubled the sauce recipe and added 2 TSP of worcestershire sauce and 2 TBS of red wine vinegar. This added a little tang to the chicken so that the sweetness of the ketchup and brown sugar wasn't so over powering. My family LOVED it!!

Country Crunch Pancakes

I wanted to make something a little extra special for my kids, and having all but the blue berries, I decided to make this for them. These were great! Really good flavor and nice and filling. I'm going to keep frozen blue berries on hand for the next time I make these, as I'm sure they'd be even better.
