About this Cook
I'm a busy mom to four little yahoo's. I love to cook, and enjoy trying new recipes with my family.
My favorite things to cook
desserts! I'm always asked to bring a dessert to gatherings. I seem to be able to spot a good one in a cookbook, lol
My favorite family cooking traditions
during the holidays, my grandmother, cousins, aunts, anyone female relate, lol, will get together and prepare for whatever feast we were serving. I learned so many things from different people, and it was fun too.
My cooking triumphs
I threw a baby shower tea for a friend last year. I got my timing just perfect, and my hot horderves came out right as the guests arrived, and the food flowed really well with the event. I did a tripple berry trifle (first try at this!) that everyone thought I had made at a local bakery, and everyone was amazed that I had made all the food (and I've had people since ask me to parties for them, lol)
My cooking tragedies
my first year in college, I decided to have some of the other students over who were also unable to go home for the holidays. I've watched my mom do the turkey for years, and I was confident I could pull it off. Yeah, we ended up all chipping in for Boston Market, lol. It still gives me a good chuckle every holiday season

Brunch Enchiladas
these were good, although a little milder than I anticipated. I added some fresh mushrooms to the green onion and bell pepper mix, which we really enjoyed. I think some green chili's would have been really good as well. Do let these sit overnight as that is what appears to thicken the sauce up. I didn't, and they had to bake longer than the recipe states.

Bread Machine Rolls
these were wonderful!! I made them for Christmas dinner and my family loved them. I did take previous reviewers advise and allowed them to rise longer. As a note for anyone who's concerned about them being "sweet". The sugar is used to activate the yeast. You NEED the sugar in them. They're a very light roll, not overly sweet in anyway.

Easy Texas Chili
My family and I really enjoyed this! I did make small changes, like just 1 TBS of chopped jalapeno, cutting back the chili powder to 1/4 cup, and adding 1 TBS of cumin and 1 TBS of paprika. It had a really nice kick to it, without it being to hot for kids. Definitely a keeper!
