Tomato Basil Salmon

I also used fresh basil. It was a very pretty presentation but I didn't care much for the cooked tomato/salmon combo. Personal preference though.

Tomato, Basil, and Feta Salad

This was a great salad for using veggies from my garden. I used a cucumber I grew as well as basil, and two types of cherry tomatoes, a brandywine, and some orange tomatoes that gave the salad some color. I also used a walla walla onion and I only had Parmesan. I may need to go buy some feta just to remake this salad!

Asparagus with Blue Cheese Sauce

Yum! I made this with pork chops and it was great on both the meat and asparagus. I didn't have evaporated milk so I used dry milk mixed with just a little water to make it thick. Also light cream cheese. It became a little overpowering after a while, but I also used very strong blue cheese.

Soft Sugar Cookies V

These cookies are great. They stayed soft overnight and into the next day. By then they were all gone. I also froze some and after defrosting they were also still soft. I used Decorator Frosting, which was a great frosting for the cookie.

Spinach Lasagna III

This spinach is so good, and if made well, you won't even miss the meat. I've made it quite a few times, and can say that the occasions I've skimped on the sauce the lasagna hasn't come out as well - more dry. I usually make it in two smaller pans so I can freeze one, and the second usually doesn't get as much sauce as the first. Use plenty of sauce (1 jar may not be enough), lots of the cheese/mushroom filling and the lasagna should come out great. It also freezes well. Just defrost and cook. Preparation can take quite a while, but you can buy chopped mushrooms, spinach in a bag, and shredded cheese to really cut down the time.

Aunt Teen's Creamy Chocolate Fudge

This recipe is so easy to make and turn out so good! You'll never be able to eat a piece of someone else's grainy, dry fudge again. Layer with "Creamy Peanut Butter Fudge" for peaut butter/chocolate goodness!

Creamy Peanut Butter Fudge

This is such an easy recipe to make, and the fudge comes out so creamy and smooth. I have started to not like anyone's fudge but my own because other fudges seem to always be dry and crumbly. This fudge is amazing. I like to pour half a layer of "Aunt Teen's Creamy Chocolate Fudge" and half a layer of this fudge to make a peanut butter/chocolate layer. So good!

Soft Peanut Butter Cookies

I love anything peanut butter, especially cookies. I can't make these cookies without a reason though, because I could eat the entire bowl of dough, or if I made it past the dough I could eat every last cookie. These cookies are so good!

Green Salad with Cranberry Vinaigrette

This is an excellent salad, but more importantly, the dressing is amazing and will work with so many other ingredients. I usually keep cranberries in my freezer so it's easy to throw all ingredients in a cup and use my hand blender to mix everything up. Goat cheese tastes great with the dressing and spinach as well. I usually use a little less oil and splenda to sweeten.

Zucchini Bread IV

Great recipe. I use the 1/2 applesauce 1/2 oil combo, crumbs, and also sub about half the flour for whole wheat. It will come out dry if you put in too much whole wheat flour, so I use either less flour or a little more applesauce. I'm used to the dry whole wheat texture, so if you really want to make a zucchini bread to impress, maybe go with all white flour, but definitely use the crumbs! Yum!

Connie's Zucchini 'Crab' Cakes

I make this recipe (almost) exactly as stated, and the "crab" cakes are excellent! I do use a little less butter, and a lot less oil to fry. I also make a tarter sauce for dipping. So good!

Chocolate Chip Apricot Cookies

I'm giving these a 5 because the flavor and idea was so good, but my experimentation wasn't. The recipe sounded so good that I had to make them, but I didn't have any dried apricots, only apricot jam. I substituted 1/4 cup of the white sugar for splenda, and added 1/2 cup apricot jam in place of the apricots. The result was a super sweet cookie with amazing taste that was too runny. I WILL make them again, and if I don't have dried apricots I will leave out the white sugar as the jam is sweet enough, and add a little more flour. I also froze part of the dough, but haven't cooked them yet to see if there is any difference. WOW! Apricots in chocolate chip cookies, what a great idea!

Lemon Zucchini Bread

This is a great bread. I loved it when I made it as directed by the recipe, but have been making some changes each time have made it since by adding applesauce and whole wheat flour. I also added lemon extract while I had it, because I loved the lemony flavor of the bread.
