My name is Crystal & I am a 28 year old homeschool mom of 2 girls. My user name pretty much says it all - I am a true redneck woman. I was born and raised in the south, and I wouldn't be happy any where else. I love the beauty, the charm, the food, and so on and and so forth. Cooking is my favorite thing to do in my spare time. My recipe for fried chicken - its a hit every time! Also, when I finally got the knack of making and assembling tamales - that was another major one!
My cooking tragedies
Trying some Peanut Butter Thai Chicken from this site. It was wretched, and I still have nightmares! I should have known better to have cooked it! Peanut butter goes on sandwiches and chocolate, not on chicken! Chicken is for frying in a cast iron!!

Mexican Shepherd's Pie
This recipe is easy to make - but as far as tastes go, it is nothing that grand. It is not bad tasting by any means, but not outstanding either - just ok. I have tried it a couple times, and like it better with a few modifications - but still even with the modifications, its still just ok (but better than as written). I add fresh sauteed garlic, black beans, and a can of green chiles. I also mix in the corn instead of layering it. I add cheese, and cream corn to the cornbread as well.

Jalapeno Poppers of Champions
I have never made these with vegetarian bacon, and I know I never will - real bacon is required for this dish in my opinion! I add some shredded cheddar cheese & chopped green onions - and brush some bbq sauce on top of the bacon, and its just one of those addictive foods you can't stop eating. I give the recipe a 3-4 star as written, but a 5 star plus with a couple modifications.

World's Best Peanut Butter Fudge
Very yummy, and very easy too! I used 18oz of peanut butter because my hubby likes his peanut butter, and also followed the other reviews that said to mix the flour, peanut butter, and marshmallow cream together before adding it to the sugar mixture.
