Zucchini Brownies
These are fantastic! They aren't quite as dense as brownies made from the box but that doesn't mean they aren't delicious. I had tons of zucchini left over from the garden this summer and decided to try this recipe out. The only change I made was to add about an extra half cup of zucchini. They are super moist and delicious. When using the zucchini make sure you don't drain it before adding it to the recipe. If you drain the zucchini it will probably turn out more dry than preferable.

Beef or Chicken Enchiladas
This is an amazing recipe! I made it with ground beef and I added some salt, pepper, and cumin to the beef while I was browning it. For the sauce I followed it almost exactly...I only changed it by using one can of green chilies and 2 fresh diced jalapenos, I also added more garlic and cumin because I love their flavour. I only used 6 small sized flour tortillas to make each one more filling and used only cheddar cheese because that is what I had on hand. I will definitely make this recipe again!

J.P.'s Big Daddy Biscuits
These were great and fast! I wanted them to turn out a little taller (meaning more fluffy/have each one rise more), but with most breads the first time you make them they aren't perfect. I will make these again.
