Eggplant Sandwiches
These are the worst! The eggplant was so soggy, it reminded me of guacamole. You should try instead to microwave the eggplant for about 1 1/2 minutes, or until the centers are cooked, then melt margarine in a large skillet over medium heat and fry them until lightly toasted on each side. That's how it's done in the eggplant burger recipe on this site that's fantastic! They come out perfectly. If the eggplant hadn't been ruined, this recipe might've been good.

Tuna Dumplings
These are great! I would cook them without the soup first as someone else suggested so they don't get too soggy, but they're still good if you don't. Each person will get a little of the soup, so I serve this in bowls. Also, you could try these on canned round biscuits--just flatten and stretch each biscuit, put the filling in the middle, and fold over into a triangle.

Jane's Ham Puffs
This is just so-so. Definitely different way to serve eggs and ham. I would watch the baking time--mine came out a little dry. This recipe calls for "mushroom sauce"--I assume it means a white sauce, not mushroom gravy. Betty Crocker has a great mushroom sauce recipe.
