About this Cook
I am a SAHM/ WAHM mom. I have 4 kids that keep me running and they aren't even in Jr. High yet! I love to cook and spend hours on this website looking for the next perfect recipe to try out! It helps me keep my sanity! I started cooking when I was quite young. My mom hated cooking, although she's not a bad cook. So when I volunteered to start cooking, she was all over that. And she let me experiment and that was great for me!
My favorite things to cook
I go in waves. Right now I'm in a Mexican food kick. But since the holidays are coming up, I will be back in a candy and gift that you can eat kick too. I cook alot w/ beef and chicken breasts. My ultimate favorite thing to cook is soup. I love when the weather cools down and I can curl up w/ a bowl of soup!
My favorite family cooking traditions
I like to make caramels every Christmas. I was having a problem with the kids not getting their homework done and we would be up til 10, 11 at night! So I started a new thing that if they get their homework done before I have dinner done, whether it is at 5 or 8, I will make them dessert! I have had to make dessert every night since I started that! Well, worth the extra time it takes me. And every night, the kids all take turns being the dinner helper. I want them to love cooking as much as I do.
My cooking triumphs
Any time my kids gobble down what I made, I know it was a success! And when my husband tells me, "This is my favorite meal!" That changes a few times a week, but it still makes me smile. He even told me I should I say I'm an expert cook! HAHA! I'm not sure that word would quite describe me, but it was a compliment!
My cooking tragedies
I think I bomb a meal at least 2 or 3 times a month. My latest tragedy was corndog casserole. I don't even think a dog would have eaten that! Gross!

Island Barbecue Chicken
Family loved it. Didn't have time to marinate overnight so poked lots of holes with a fork and made marinade extra thick by using only 1 cup water and added 1/2 cup corn syrup. Blackened the thighs on the grill. Flipped several times basting each time. Finished them off in the oven at 400F about 15-20 minutes.

Roast Pork
We LOVED this! I cooked this in the crock pot for 8 hours and didn't marinate is at all. I only used 1/2 c. of sugar instead of 3/4 c. I used 5 fresh squeezed limes. I think it could have used a little more soy sauce. After it cooked all day, I boiled rice and made gravy out of the sauce that it had been cooking in all day. It was wonderful. Everyone loved it!

Busy Mom Peach Cobbler
My family LOVED it! I didn't have self rising flour so used regular flour and a teas. of baking powder. I didn't put in nutmeg. I added vanilla. I was worried about it being too sweet, but it was perfect. I served it w/ vanilla bean ice cream. WONDERFUL!
