Garlic Cheddar Chicken

Absolutely delicious as written, but I've also made it without the bread crumbs for my hubby (who's constantly on a low-carb diet), and it was delicious that way as well. Just be sure to compensate for the bread crumbs by increasing the cheese.

Fat Free Refried Beans

I used pinto beans. Drained only one can. Sauteed onions (extra), garlic, a touch of cumin and a chicken bouillon cube together until onions and garlic were tender, then added all the beans. Mashed beans while cooking. I did not need to add salt, water or smoke flavoring. By the way, if you're a routine garlic doubler like me, try to resist that impulse for this recipe; it doesn't taste quite right.

Mexican Rice II

I couldn't find my can opener, so I used salsa instead of tomato sauce. It was a lot better than it was when I made it with tomato sauce. Delicious!

Prosciutto Wrapped Asparagus

My grocery store didn't have prosciutto, so I used regular ham. Also, used cream cheese instead of Neufchatel. I steamed the asparagus before wrapping them. Yummy!

Absolutely Awesome BBQ Sauce

Made with Splenda to make it low-carb, used bourbon instead of rum, and used prepared mustard instead of dry mustard. My husband was very impressed.

Sausage Jalapeno Poppers

I had never bought fresh jalapeños before, and the various peppers at the grocery store were not labeled, so I ended up with what I think were poblano peppers (long skinny green peppers that were slightly hot). I had to slightly increase the amount of sausage and cream cheese because the peppers were larger than jalapeños. To make them spicier, I added some chopped canned jalapeños to the sausage/cream cheese mixture. Delicious!! My husband, who was doing a low-carb diet, couldn't stop eating them. He wants to add this to the low-carb rotation.

Black and White Pizza

This recipe sounds pretty bizarre, but I'm so glad I took a chance on it. It's absolutely delicious!! The only things I did different were to make the crust myself and to cook regular chicken breast strips in Italian dressing. I've told others about this recipe, but they're turned off by the strange ingredient mixture and won't even try it!! Too bad for them, as this is absolutely amazing!!

Three Ingredient Peanut Butter Cookies

So good! I use brown sugar, but I've tried them with white sugar and they're almost as good. I take them out of the oven before they're cooked all the way. If you're not worried about salmonella from the eggs, you've baked them too long!! Once I cooked them until they were somewhat brown on the bottom, and they were not good!

Quick and Easy Pizza Crust

Really good! I added some garlic powder and a small amount of Italian seasoning to the dough. It was a tad thicker than I wanted (I was trying to emulate NY-style pizza), but still delicious! I baked it for about ten minutes on a preheated pizza stone before I added the sauce and toppings, then baked it another ten. This is the first homemade pizza I've ever attempted, and I was very impressed with the results. Very fun to make, too!!

Absolute Mexican Cornbread

I used one stick plus 5 T. of butter, and extra cheese (plus I put some cheddar on top for the last ten minutes). 1/2 cup of sugar was plenty. I used an entire 4-ounce can of green chiles and chopped up half a small can of jalapeños and added it to the batter to spice it up a bit. Really, really good! Because of the sugar and the moistness, it molds/mildews within a few days, so be sure to eat it quickly or refrigerate it.

Pan-Fried Asparagus

Cut the salt DRASTICALLY! I like salt, but half the called-for amount is still twice as much as you'll need or want. Also, I cut the oil in half and it was still pretty oily.

Kentucky Pecan Pie

Perfect! Be sure to use the best pecans you can find. I bought pecan halves and coarsely chopped them (adding a little extra), and garnished with a pecan half on each slice. Picture-perfect and the best pecan pie I've ever tasted.

Cha Cha's White Chicken Chili

I think the key to this recipe is to use shredded chicken instead of chopped. Also, simmer the shredded chicken with the garlic (I doubled the garlic), onions, jalapeños, green chiles, spices and broth for about 10 minutes before adding the beans (undrained). It's absolutely delicious! You should NOT radically alter the recipe. Artichoke & Spinach Dip Restaurant Style

Use the whole package of cream cheese and add some extra mozzarella on top. And I always increase the garlic. Buy higher-quality artichokes because it can really make a difference. Serve with pita triangles and/or bagel chips.

Broccoli and Ramen Noodle Salad

I used regular coleslaw mix instead of broccoli coleslaw and sliced almonds instead of peanuts. This is best when you keep the slaw/green onion mixture, the sunflower seeds/almonds/ramen noodles mixture and the dressing separate until serving time (much better when it's crunchy, but it's still pretty good when the noodles and nuts get soggy). It will stay somewhat crunchy for about 12 hours after mixing together. SO good!

Taco Salad I

I used 3/4 pound HB and 1 1/2 cans beans (this would probably be good with no meat and maybe 2 1/2 cans of beans). I used Catalina instead of French dressing. I use Romaine or green leaf lettuce instead of iceberg. Nacho cheese Doritos are crucial to the recipe. You'll have to have this salad at least once a week! It's addictive. I didn't bother with salsa or sour cream so I don't know how the recipe tastes with them. I can't imagine they could make it taste any better, though.

BLT Salad

I cooked 3/4 pound of bacon in the microwave, then crumbled it using the blender. Then I poured out the bacon bits and mixed them thoroughly with the chopped tomatoes so the bacon and tomatoes could flavor each other. There were lots of bacon bits still clinging to the side of the blender, which I then used to make the dressing. For the dressing, I used 1/2 cup of mayonnaise and 2 heaping regular (non measuring) teaspoons of sour cream but no milk (I did not need any additional salt). I also used slightly less garlic powder than the recipe called for, even though I LOVE garlic. I used some bagged romaine lettuce this time, but next time I will use green leaf. This was really, really good! The mayo/sour cream/bacon bits dressing was delicious. I kept the lettuce, tomato and bacon mixed together, but added the dressing and croutons at serving time. EXCELLENT!!

Black Pepper Beef and Cabbage Stir Fry

Wow!! SOOO good. I doubled the recipe, and only used one red pepper (actually, it was an orange pepper), and replaced the other pepper with an onion, which I cooked with the garlic and hamburger. Per other reviewers’ suggestions, I used a generous amount of salt (thoroughly ground into the thoroughly-ground-up hamburger meat, of course). My only beef (pun intended) with the recipe is that the purported total cooking and prep time is fifteen minutes (LOL)!! It’s more like an HOUR and fifteen minutes!! This goes very well with this sesame green beans recipe (http://sidedish.allrecipes.com/az/SsmGrnBns.asp).
