My cooking triumphs
my grandmother is known for her pecan pie. she's been baking it for longer than i've been alive. when she and my granddad came to visit, i thought i'd try to make them feel at home and make one. i was nervous, but i heard her say (hilariously, under her breath, just so i wouldn't hear) that it beat hers! YAY!
My cooking tragedies
i was cooking a beef stew for a large group (20-25). i had everything finished, but the stew needed to simmer, so i asked my husband if he could PROMISE to remember to stir it frequently while i was gone for a few hours. BIG MISTAKE! not only did he NOT remember to stir it, i could smell the charred and burned stew when i drove up in my driveway 3 hours later. and on top of that, we had borrowed on of our neighbor's nice stockpots! yikes! needless to say, we spent another 100 bucks on lasagna from Costco!

Honey Mustard Dressing II
so quick and easy. my husband couldn't BELIEVE i made it myself. i served it with a fried chicken tortilla wrap and ended up dipping the rest of the leftover chicken in it a few hours later for a midnight snack! i didn't have fresh lemon juice on hand, so i used concentrate, and i added double what the recipe called for...it needed the kick to round off the sweetness. add a pinch of salt, as well. double it for leftovers!!!

Hot Artichoke and Spinach Dip II
i seriously ate half of this by myself! i used 2 cups of drained spinach and didn't use mayonnaise, but instead added the same amount of sour cream. i added the entire amount of mozzarella INTO the dip. i doubled it and it made enough for our dinner group (16 or so) and i had leftovers. the kids LOVED it!

Cranberry Pistachio Biscotti
this was a BIG HIT for my in-laws over christmas...i added double the cranberries! can't have enough!
