Country Green Beans

These are great green beans. I used real bacon bits instead of ham but I think ham would be good too. I made a pig of myself on these! Thanks for the great recipe!

Cream of Tomato Gorgonzola Soup

This was really good! Only had a small can of tomato soup so scaled it down to 3 servings. I really enjoyed it! Might try it by using rotel tomatoes next time for a change. Will definitely make again!

Easy Creamy Peppercorn Chicken

I made a few changes based on what I had on hand but found this very good and extremely easy to prepare! I used cream of chicken soup and country gravy mix. Will definitely make again!

Glazed Meatloaf I

This was a very good meatloaf. Used bread crumbs instead of bread as per reviews. Also added 1/2 cup finely chopped green pepper and 1/2 pkt brown gravy mix instead of beef boullion granules. Will definitely make again.

Downeast Maine Pumpkin Bread

Wonderful pumpkin bread! Increased the cinnamon to 2 tsp. and decreased the nutmeg to 1/2 tsp (because I'm not fond of nutmeg). Also added 1 cup each of nuts and raisins. Made 6 mini loaves. Will definitely make often!

New Orleans Corn Bisque with Smoked Sausage

Yummy!! Really good and very easy to put together. Added 2 cloves of minced garlic and didn't precook the potatoes. Added about 1/4 tsp cayenne pepper but husband added more. Will definitely make again!

Fresh Semolina and Egg Pasta

I've tried a number of different noodle recipes and this is by far the best I've ever made! Only made 1/2 recipe and it still made a ton of noodles. Did add about 1 tsp of water but our climate is very dry (in the desert) so I often need to add a little extra moisture. They cooked up beautifully and still held their shape. I will difinitely make these again! The use of a Kitchen Aid and a pasta maker made this very easy!

Kielbasa with Peppers and Potatoes

My husband loved this! I used russet potatoes and turkey kielbasa. I think reds and regular kielbasa would have been better but a bunch more calories! I also added coarsly chopped onion. Sure was easy!

Homemade Tomato Sauce I

I had some "less than wonderful" tomatoes from my garden that needed to be used up so decided to try this. My sauce looked nothing like the picture! Even after running through the blender it was still a little chunky and was orange rather than red, but it really did taste good! I combined it with my Italian neighbors meatballs and let them simmer for a couple of hours. It actually got too thick so I had to thin it a little bit. Really a good sauce but I won't do it often. It was pretty labor-intensive.

Spaghetti Pie III

WOW! This is great! Used the full 8 oz package of cream cheese and low fat sour cream and mixed it in with the pasta. Also added a can of mushrooms and put a little Parmesan on top. Made a ton!! Next time will cut the recipe in half but there will definitely be a next time. Thanks for sharing the recipe!

Quick and Easy Green Chile Chicken Enchilada Casserole

Made a few changes in this. Only made 4 servings but used about 3/4 of the 28-oz enchilada sauce and added 1/2 cup diced onions and one finely diced jalapeno to chicken mixture. I did "toast" the tortillas in a nonstick skillet. They didn't go completely to mush as others commented. We really did like this but it's similar to Green Chili and Cheese Chicken on this site and I think we prefer that to this. Also that seems less labor-intensive than this. The addition of the jalapeno added just enough heat for me.

Chicken and Dumplings II

Excellent recipe! I omitted the green pepper and tomato but otherwise followed the recipe as written. Probably the best chicken and dumplings I've ever made. We ate until we were stuffed! Will definitely make again!

Chicken and Biscuit Casserole

This was good! I added a little frozen corn and some parsley flakes and poultry seasoning. Still a little bland. Maybe add some more herbs next time but I will make it again! Maybe add some mushrooms next time too.

Tomato and Pepper Salad

I love this salad! Great fresh taste and almost calorie free! I added about 1/4 cup chopped red onion and subbed 1/2 red pepper for 1/2 of the green pepper. Also used a packet of Splenda instead of sugar and red wine vinegar. Terrific!

Sweet Restaurant Slaw

Great cole slaw! I had a very firm cabbage that I shredded then added a large shredded carrot instead of the bagged stuff. I think I had more cabbage than is in the bag, but that was OK because we don't like goopy slaw. I used light Miracle Whip and Splenda. I also increased the vinegar to 3 T. It was a little bit sweet for me but my husband said it was the best he's ever eaten. This is my new cole slaw recipe!
