Cranberry Lemon Scones

Fruity Rainbow Salad
I was not impressed with the soggy outcome. Since directions say to refrigerate for a few hours or overnight, I opted for overnight, for a brunch... rather than just an hour in the morning. I wish I had kept the strawberries out of the mix, and added them in the morning, same goes for the peaches (I used fresh). The lemon/honey flavor was overpowering to me. I guess I love FRUIT, just plain FRUIT. So next time, I won't add any juices whatsoever. It did look beautiful :) And w/o the lemon juice, pineapple, honey mixture, it would have gotten 5 stars. But all fruit does for me. Some people may prefer the sweetened flavor, and it may be for you. I didn't even taste a hint of nutmeg. So that wasn't an issue.

Microwave Caramel Popcorn
Love this. A family member gave me a very similar recipe-- and like another reviewer, it called to SPRAY (with Pam or the like) the inside of the paper bag, before adding the popcorn, i think it helps with the coating. I also agree with ilareau, that it really HELPS to pour the popcorn into a bowl first, and scoop JUST the popcorn, NOT the un-popped kernels, into the paper bag, that way you aren't trying to chew pop corn kernels coated with caramel! I added slightly chopped peanuts, and it was DELISH! I think Toasted Pecans sounds like a yummy addition. SO that is next! My recipe says to microwave only for 30 seconds at a time, about 3 times. So that's what I did.. maybe closer to 20 seconds each time. I HALVED the ingredients that make the caramel, and used 2 bags of microwave popcorn... Was perfect.

Poppy Seed Bread with Glaze
Great recipe, my Mom used to make this 20 years ago! I have a recipe that is almost exact to this one. Only diff was 1 1/8 cup of oil (which I did, to cut down the fat) and it turned out a bit more cakelike that I wanted... but good... And for the GLAZE... only 3/4 C of granulated sugar, REAL squeezed orange juice-- So the glaze isn't quite as sweet, and doesn't "COVER" the entire loaf, just more of a drizzle, here and there... I also like to put either lemon zest, or orange zest into it. Another change you can make, if you want to offset the sweetness, is use LEMON juice... 1/4 cup of the juice from a LEMON instead of the OJ. Then it gives it some ZING! :)
