Quick and Easy Chicken Noodle Soup

This was a great basic chicken noodle soup recipe. I sauteed the carrots right along with the onion and celery, and added some minced garlic as well. Used a can of chunk chicken that I shredded and about a half a bag of whole wheat egg noodles. Added a bay leaf and some poultry seasoning. Next time I will back off on the basil and oregano and add some sage instead. Also I used a low sodium chicken broth which I wasn't a fan of, so next time I will use regular.

Chocolate Mint Candies Cookies

These were great!!! A new holiday favorite! The cookies were soft and rich and the mint flavor was a great addition, without being too minty. I used a bag of Andes mint baking chips instead of the actual candies. After baking, I immediately pushed down on the middle of the cookies with the back of spoon to make a small well. Then added about a teaspoon of candies into each well. Once soft, spread candies with the back of a spoon and then topped with red, white and green candy sprinkles to give it some christmas color. They were absolutely delicious and looked festive too!

Chocolate Pretzel Rings

I used an 11 oz bag of kisses and it made 67 pretzel rings. These are honestly one of my favorite holiday treats and the fact that they are quick and easy to make is even better. I love the combination of the salty and sweet flavors! My only tip is when you are pressing the M&M's into the kisses, make sure you press hard enough that the chocolate spreads far enough to touch the sides of the pretzel otherwise they won't stick together.

Butterscotch Gingerbread Cookies

These were alright. A little too sweet, maybe too much butterscotch. I did bake at 330 degrees for 10 minutes as another reviewer suggested. Ended up with a very soft cookie.

Raspberry and Almond Shortbread Thumbprints

The jam did seep out on a few, but wasn't horrible. At first the glaze seemed really thick, but I added a little extra milk and then it was too thin. I would suggest letting the cookies cool before glazing otherwise all the glaze congregates in the center and you don't get the drizzle effect. I ended up with 24 cookies.

Coffee Bonbons

I enjoyed these, but my first batch burned. I measured the balls to equal 3/4 inch, but 18-20 minutes was too long to bake. I would suggest 14-15 and just keep a close eye on them. It would've made 45 cookies but I ended up with 30 after the first batch burned. I had just enough glaze for the 30 cookies so if I make these again I would increase the amount of glaze. I also topped with chocolate sprinkles after glazing. Delicious coffee flavor.

Toffee Caramel Squares

These were awesome!!! I used a 7x11 inch pan. Let the first two layers chill in the refrigerator before glazing with the chocolate. Then let it chill again before cutting into squares. Loved them!

Zesty Slow Cooker Chicken Barbecue

We thought these were great! I used 3 large chicken breasts which were about 2 lbs total in weight. Used Famous Dave's Devil Spit BBQ sauce. Cooked frozen chicken on high for 4 hours. I thought there was going to be too much sauce, but once it was shredded the sauce absorbed into the chicken. Had a nice kick to them, which we love. I put pickles on top of my sandwich and my husband topped his with jalapenos and cheese. We will definately make these again. Would be great to serve for a party too.

Cheesy Chicken Meatballs

We really enjoyed these. Used ground turkey instead of chicken because it was priced better. Didn't have garlic cream cheese but used plain light cream cheese instead. Didn't feel that it needed the extra garlic. My only complaint is that the mixture was too moist to roll into meatballs. I ended up adding more breadcrumbs to thicken it up. I probably used about 1/3 to 1/3 cup bread crumbs total. Had a nice kick to them. Made about 17 meatballs.

Stuffed Eggplant with Shrimp and Basil

This turned out pretty good, I had never tasted eggplant before, so not sure what to expect. I used 2 medium sized eggplant, 1 pound shrimp and used just slighly more than 1/2 cup wine. Didn't care for the skin of the eggplant, but the stuffing was really good. Couldn't even tell there was eggplant in it. Just tasted like a seafood bread stuffing. We really enjoyed it.

Baked Omelet Squares

This turned out very good, and was super versatile. I browned up 1 lb pork sausage with 1/2 small onion, a few mushrooms, and chopped jalapenos. Added sage and red pepper flakes (omitted the butter). Sprinkled 3/4 cup cheese on bottom of greased 7x11 inch pan. Covered with meat mixture. Then poured 8 eggs whisked with 1/3 cup milk, salt and pepper over that. I then sprinkled with another 1/4 cup shredded cheese and baked at 400 for abour 25 minutes. So many different ways you could make this recipe. Loved it!

BREAKSTONE'S Triple Chocolate Bliss Cake

I thought this was delicious. Very moist and spongy cake. I did substitue brewed coffee for the water. Used strawberries instead of raspberries, but I'm sure both would be great. Not everyone liked the semi-sweet topping, might try using milk chocolate next time.

Double Layer Pumpkin Cheesecake

This was yummy, but it did take quite a bit longer to bake than directed. I just kept a close eye on it until it looked set. The only other thing I might do differently next time is to make my own crust and bake in a springfoam pan. I just hate to use pre-made crusts because it doesn't look as nice in the aluminum pan, however it did taste good.

Slow Cooker Sausage with Sauce

These were delicious, but I prepared them a little differently. I sauteed onions and peppers in a pan with a little olive oil until tender. I then added the sauce and sausaged and simmered until heated through. After that, I placed sausage, sauce, peppers and onions in hoagie rolls, sprinkled with shredded mozzarella cheese and broiled in the oven for a few minutes. Turned out great. My only sugggestion would be to use brat buns instead as the hoagie rolls were a little big.

Apple Pie

This is awesome. Tastes good hot, cold, and even room temp. Makes a huge batch - definately need a huge pot or even two of them. I used 150 proof everclear and only put in half the bottle. Served as cocktails and felt they were plenty strong.

Honey-Dijon Ham

This was good, but nothing special. I had a 6 lb ham so I increased the oven temp to 350 and baked for 60 minutes before applying the glaze, then baked another 15 minutes or so. I didn't think the glaze made a very good dipping sauce. So, if I were to make this again, I would cut the glaze ingredients in half and just use to baste the ham.

Ham N Cheese Potato Bake

It tasted a little too much like cream soup to me or maybe it was the cheddar soup I didn't care for. I think I would have preferred something a little more buttery in flavor. I did not have hash browns on hand so I shredded 6 med/large russet potatoes. Would also be good with thinkly sliced potatoes. I increased the ham to 2.5 cups and it was fine, but a little more wouldn't hurt either.

Velvety Pumpkin Soup With Blue Cheese and Bacon

Wow! A creamy pumpkin soup with a big spicy kick! I did not top with the blue cheese and bacon, because I did not have any on hand, but it was still delicious on its own with a handful of croutons. I first melted the butter and sauteed the shallot for a couple minutes over medium heat. Then added remaining ingredients, brought to a bubble, then reduced heat to low and simmered for 10 minutes.

Crunchy Pumpkin Pie Granola

I enjoyed this recipe. Does not taste like pumpkin pie but has that nice pumpkiny spice. I followed the advice of some other reviewers and turned the heat up to 300 for the last 20 minutes. I would not recommend doing this, as the granola came out a little too crunchy. If it doesn't seem crisp enough after 1 hour at 250, I would just let it bake a few minutes longer. Also, I used all craisin's for the fruit.
