I'm a Montana transplant to Minnesota. Life is good here! I have a beautiful house very close to the lake, two beautiful dogs, and as of November, a husband! I'm working on graduate school, so life has been hectic to say the least. I don't always find time to cook, but when I do, I'm usually glad that I did. I am resolved to cook more now that I am finished with my teaching license. Now if only I could find a job :) ...
My favorite things to cook
I tolerate cooking, but I LOVE to bake. Cookies, cakes, bars, muffins, brownies. Baking is my vice, and unfortunately most of the stuff I love to bake is also unhealthy.
My favorite family cooking traditions
Cooking has always been very seasonal in my family. I can't think of anything that we eat year round. Here are my favorites: Fall: anything with apples, and chicken and dumplings Winter: lefse and fruit soup Spring: anything with rhubarb Summer: anything with berries, grilling every night, gorgeous fresh salads
My cooking triumphs
I tend to fixate on the tragedies :) I wouldn't be a proper scandinavian if I didn't.
My cooking tragedies
I have so many...where to begin? I have a tendency toward kitchen mishaps whenever people are coming to my house. There's the time I baked cupcakes in a disposable pan still wrapped in plastic (what a mess!) or the time I sliced the tip of my finger off just minutes before my in-laws were coming for dinner. I've come to expect this sort of thing :)

Raspberry Lemonade Pie
I was really excited to make this, but it ended up not being to my taste. Both my husband and I didn't really care for it. I think the lemonade concentrate gave it too much sharpness and acidity, if that makes any sense.

Veggie Quesadillas
I thought these were really tasty. They were easy to make, relatively healthy, and they tasted good. A winner!

Thai Noodle Salad
This is one of my favorite salads to make in the summer. I love it! It doesn't keep that well in the fridge, though. The cucumbers get kind of icky and the salad goes watery. Best to make it not long before you serve it. Also, refridgerating can affect the consistency and make the dressing and noodles kind of stiff. It still tastes good, it just doesn't look as pretty and is harder to serve.
