Spaghetti Squash I
This was my first time making spaghetti squash and it turned out awesome. It was so much fun running the fork down to get the strings out. This is such a great alternative for me instead of pasta. I'm on a new eating plan and I just love it. Next time I am going to add chicken to the recipe to give it a little more portein. Instead of plain feta cheese I added some mediterain feta cheese and it turned out great.

No Bake Peanut Butter Pie
Wow! This is such a great and easy recipe. I purchased a crust only to tip it out and it broke all over. Much to my dismay and horror as it was 9;00 at night. I quickly made a homemade graham cracker crust (first one). It turned out great. I followed the other suggestion and put some hot fudge in the bottom before putting in the filling. I placed in the freezer overnight and took out in the morning to bring into work. It was quickly consumed. This recipe is certainly a keeper!

Stir Fried Kale
This recipe was great. This was my first time eating and cooking kale. A friend of mine brought some over the other night. I was pleasantly surprised with the taste and texture of this recipe. I followed it exactly. The only thing I would do differently next time is to steam the kale first in some veggie broth. The bread crumb mixture didn't want to stick to the kale too much so I added a little more olive oil. Great way to get in your vitamins!
