Patti's Mussels a la Mariniere

This was my first time making mussels and it turned out fabulous. A great recipe and very simple! I also read the allrecipes.com article on cleaning mussels but the ones I bought were mostly clean and debearded already. I followed someone else's tip on doubling the sauce and serving over pasta, and I don't think I will do it that way again as it did not really add anything. Butternut Squash Fries

This is a great use for butternut - I've made them twice so far and the first time they were fabulous, the second kinda eh but I think I did not bake them long enough. I was hungry!

Double Layer Pumpkin Cheesecake

Yummy and very simple, esp using the libby's easy pumpkin pie filling like I did. Next time I think I will bake it a little longer because it was a little runny.

Creamy Sage Butter Sauce

This does not work at all as is, the sauce is too thin and did not thicken no matter how long I waited. I finally added flour the the mixture and got it thick enough to be functional, but I will not make this again. Though I might use some chicken broth the next time I make alfredo sauce to make it a little lighter.

Garlic-Lemon Double Stuffed Chicken

This was fantastic, I wouldn't describe it as 'quick & easy' but very tasty. I only made it once so far, but for a guy I was dating and he was amazed. I followed the advice some others gave about rolling the chicken out then rolling it up and it worked fine but next time I think I will try butterflying it like the directions say.

Mexican Baked Fish

This was fantastic! I was really not expecting too much because it was such a simple recipe but I was pleasantly suprised or shocked is maybe a better word...the work to taste ratio is through the roof. I used tilapia and I only made 3 pieces, another plus is that it adjusts easily, I live alone and I'm always looking for something to make for 1. Lentil Stew

This was really tasty, I made some of the changes suggested by the other reviewers, I added the lentils at the beginning so they cooked a little longer and used some turkey sausage instead. I also used tyme, entirely by accident because I wasn't paying attention but turned out great! And there is tons, I think I'll be eating this all week. http://single-girl-gourmet.blogspot.com

Four Cheese Baked Ziti

Artichoke & Spinach Dip Restaurant Style

I made this and it was execellent! But here is a great idea for the leftovers (if there is any!) Make spinach and artichoke quesadillas! A place I used to work made these and I stole the idea for at home. Just make the dip like normal and spread it on a tortilla that has been buttered and cook it for a few mins on the stove, they are execellent, especially with Japs, bacon or chicken. Great for leftover dip.
