Slow Cooker Escalloped Chicken

Reviewed: Feb. 6, 2009
So good!!! The flavor of the stuffing was out of this world! DH said he could eat it every day! After reading the other reviews, I too cut the butter in half and used less liquid ( 2 cups chicken broth) The other changes I made were, I sauteed the onion and celery in olive oil, used frozen boneless chicken breasts, and used 2 cups of chicken broth instead of water. I will cut the butter down even more next time ( 1/4 cup?) and since it was mushy, I will cut the broth back to maybe 1-1 1/2 cups . Really though......very very tasty and easy! I put it in my favorites...thanks!

When you read these reviews, you will see many references to JELLYBEAN14. I searched forever to find that review! So to save you the frustration, she posted it on page 25! ( July 2005) Turned out great BTW.

Easy Strata and Variations

Reviewed: May 1, 2007
This made the best breakfast casserole I ever tasted! My guests wouldn't stop raving about it! I used another recipe for another one and that one was a flop. This strata has the perfect consistency! I sauteed 2 onions and one green pepper in a little olive oil...then added a pound of turkey sausage. Thanks for a perfect recipe Callie!

Bacon Roll-Ups

Reviewed: May 1, 2007
Oh my goodness! These things are amazing! I had my doubts at first but...wow. I made a bunch of them ahead of time and kept them in my fridge overnight. ( I found 1/2 brick of 8oz. cream cheese covered one pita bread.)I then cooked them in my toaster oven the day of my party. ( I had other things baking at the time so I couldn't use my oven) I baked them longer than called for in the recipe, as I like my bacon brown and slightly crisp. I accidentally forgot the last batch and the bacon burned....but even that didn't hurt these things! They were still delicious! Thanks Machenzie!

Angel Cake Surprise

Reviewed: May 1, 2007
Wow...with all these 5 star reviews, I was expecting something more! I followed the recipe exactly...all except for the pineapple. I am afraid I found it to be too sweet. The red color of the jell-o was also kind of shocking! I bet it would be fun for a kids party. It just didn't go over at all at the Bridal Shower I brought it to. Guests took a few bites then left it on their plates. I ended up throwing the majority of it away. Sorry.

Peanut Butter Pinwheels

Reviewed: Feb. 1, 2007
My daughter and I made these cookies together, and they turned out delicious and very pretty. We put the dough in the freezer while we melted the chocolate, and I think that helped. We used a pastry cloth coated with flour, then rolled it right up in the cloth. The hardest part was cutting them because the dough was soft while the chocolate was hard. You will want to do it fairly quickly and use a serrated knife. We just reshaped the ones that got a little smushed! Thanks for a great cookie recipe!

Speedy Cinnamon Rolls

Reviewed: Jan. 28, 2007
Oh my goodness! These are SO delicious! I doubled the recipe...made one batch exactly as the recipe was written, and made the other batch in a rectangle cake pan with no nuts. Both were amazing! Just remember to leave yourself time to let the frozen bread dough thaw. I just set mine in the fridge over night and made the rolls in the morning. Couldn't have been easier. Great recipe. I highly recommend it. Thanks!

Whipped Mashed Potatoes

Reviewed: Aug. 2, 2006
This is my standard mashed potatoes recipe. I , however, never add butter to mine...just warmed milk. I feel the consistency is much nicer, and people can add their own butter ( or butter substitute) to taste! I do add a little salt to the water when I boil them.

Mock Tuna Salad

Reviewed: Jan. 19, 2006
This was SO good! I can't wait for my vegetarian daughter to come home and try it!! I used lite mayo, a little bit of Miracle Whip, a small tsp. of horseradish in addition to the ingredients listed. I put in on a whole wheat english muffin with lettuce and thin sliced cucumber. (I would have added tomato but I didn't have any! I think regular onion would have worked just as well...or celery if you're not an onion person. You HAVE to try this!

Creme de Menthe Cake I

To tell you the truth, I have never made this cake using white cake mix! Being the chocolate lover that I am I always make it with a homemade chocolate cake recipe I have. (I'm sure a boxed choc. would be fine) Last time we made cupcakes and wow...were they good! I use hot fudge as other reviewers have suggested.

This really was the best apple pie I have EVER tasted! I remember an old "Walton's" episode where gramma won the pie contest because of a secret ingredient...a little bit of grampa's whiskey. Well now I know why! Thanks!

I love these meatballs! Christmas wouldn't be Christmas without them. I thought I reviewed them last year but I guess I didn't. I make them "Swedish Meatballs" by adding a little nutmeg to the mix, and baking them with a can of mushroom soup poured over the top. YUMM!!
