Rave Reviews Coconut Cake
This was delicious! I omitted the nuts and did not toast the coconut. I also reduced the amount of sugar in the frosting by 1 cup and found it still plenty sweet. No issues with quantity of frosting because I baked in a 9 1/2 x 13 sheet pan instead of layers.

Pineapple Mojo Cake
This is delicious. I used three 8 ounce cans of crushed pineapple in order to get enough liquid, and also doubled the cinnamon as other reviewers suggested. Since I used the extra can of pineapple, I could have used more butter and brown sugar in the topping, but it was still fine without.

Apricot Lentil Soup
This is a delicious soup, and easy to prepare -- a winning combination! Like some others, I doubled the cumin and I added 1/2 tsp curry as well -- everything else was as per the recipe. Will make again!
