Slow Cooker Sausage with Sauce

I hate to rate this recipe so low, cause I had high hopes for it. The sausage lost so much flavor by cooking it for so long and was crumbly. It was bland and the peppers and onions were mushy. I will stick to making sausage and peppers in the oven or on the grill.

Shrimp Linguine

This is very flavorful. I used half butter/half olive oil and half and half instead of heavy cream. My herbs haven't grown enough yet, so I had to use half fresh and half dried...fresh are definitely the way to go though! I only used half the amount of pasta and there was just enough sauce, I can't imagine there being enough sauce for a full 16 oz. of pasta.

Pineapple Salsa

Made this and served it over grilled tilapia. It's very good, however very spicy! Next time I will add half a jalapeno and then test it. I also added lemon and lime juice. Avocado would be a great addition to this salsa.

Broccoli Salad I

Chinese Chicken Salad III

This salad is awesome!! I swapped out the wonton wrappers for toasted almonds to lower the carbs. I also used 1 T. of peanut butter and thought that was plenty. Pounded and broiled the chicken with a little s&p. Will definitely be making this again!!!

Spinach Salad with Pistachio Chicken

I'm giving this 4 stars because while the salad was really good, I don't think the pistachio chicken lent a ton of flavor. The pistachios seemed to get lost and burnt a little. I even pounded my chicken out thin before cooking. I like someone elses idea of simply toasting the pistachios and sprinkling them on the salad separately. I made my own balsamic dressing as well.

Grilled Fish Tacos with Chipotle-Lime Dressing

My husband loved these and I liked them. The sauce was so spicy (and I didn't add the full 1/2 c. of adobo) and I thought it overtook the whole dish. That was all you could taste when you ate the tacos. Next time I will use this marinade but look for a different sauce. I will also add avocado to these!

Creamy Macaroni and Cheese

This is a really great mac and cheese recipe. Soooo creamy! I actually saved some of the cheese sauce on the side cause it made so much. I'll put it on veggies for dinner one night this week. I substituted a teaspoon of ground mustard in place of dijon due to the reviews that it was too overwhelming. I also used 8 oz. sharp cheddar, 8 oz. colby jack and about 4 oz. mozzarella cheese. I thought it needed a little extra salt at the end as well.

Sesame Noodles

Excellent recipe. I ran out of garlic, only had 4 cloves. Also used peanut oil instead of safflower and will probably cut out 1-2 T. next time. I also went easy on the chili sauce since I have little ones. And cut the sugar down to about 4 T. The whole family loved it. We will use this recipe from now on!

White Bean 'n' Ham Soup

I threw all this into the slow cooker. My husband and kids loved it. I thought it was ok, but I think it's just personal preference, not that anything was wrong w/ the recipe. Quick and easy dinner.

Antipasto Squares

These are nothing short of awesome! I am pretty certain they will become my new "go to" appetizer for parties. I had to sub american cheese for the provolone. I also sprinkled a little oregano in w/ the egg/parm/pepper mixture. It's like a bite size italian grinder! Yum yum yum

Roast Sticky Chicken-Rotisserie Style

This chicken is so juicy and flavorful! My only complaint is the white pepper!!! I knew it was too much when it was all I could smell all day while the chicken was cooking. It totally took over the chicken. I ate a piece of skin and ran for my glass of water because of the spiciness of the white pepper. Next time I will definitely cut it in half or leave it out all together.

Lemon Chicken with Broccoli

I was actually quite surprised at how good and flavorful this recipe was. And it's very healthy. I didn't have the concentrate broth packets so I just made a very concentrated broth w/ buillion cubes. I overcooked the chicken but that was my own fault. I needed to reduce the cooking time due to using boneless skinless chicken that I had butterflied.

Alfredo Sauce

Good and simple. I used half and half instead of heavy cream and added pepper and a dash of nutmeg at the end. Used fresh shredded Parmesan, not the grated stuff in the green can.

Savory Vegetable Beef Stew

Great stew! So simple to prepare. I didn't have condensed beef broth so I added 2 extra bouillon cubes and extra salt. Since I halved the recipe I just used a full can of diced tomatoes and no tomato sauce. I also didn't have italian dressing but I did have an italian dressing packet so I sprinkled some on the beef while browning. Left out the green pepper b/c we don't care for it. Lastly used cornstarch/water mix to thicken at the end rather than flour. My 2 girls ate almost a full helping which is amazing in itself!

Puppy Chow II

A classic recipe. Very good, only used half the amount of butter because it seemed like a lot. Next time I will try leaving it out all together.
