Apple Pie by Grandma Ople

I hate when people do this, but here I go. I've never made the recipe exactly as written. I read some of the suggestions in other reviews and decided to try those as well as just wing it. Using my recipe, my family LOVES this pie. Easily our favorite ever. Here's the changes we use: add 1 tsp of cinnamon, 1 tsp of nutmeg, and 1 tsp of vanilla to the sauce mixture. I add the vanilla only when its simmering. Not sure if it matters, just thought it made some kind of sense. I also don't use a lattice topping because my family likes a crumble type topping. I made it with 1/4 c butter, 1/2 flour, 1/2 cup brown sugar, 1 tsp cinnamon, and 1/3 c oats. The recipe says the butter and flour should be a paste, but mine is never pasty. The last time I added 1 more Tbsp of flour but it didn't get much pastier so I just left it along. I use empire apples and cook it a little shorter (15 min @425 and 25-30 @ 350). If I go longer, the applies turn to mush, but of course that's my oven, not yours. Just don't over cook it.

Apple Pumpkin Muffins

Maybe my favorite muffin ever. I made mini muffins and medium size ones and had to adjust the time, but that was all. I bake the mini muffins for 18 min. and medium size for 25 min.

Strawberry Dream Cake I

I haven't made any other strawberry cakes, but this one is great. I used low fat cream cheese and it seemed fine. I tried non-fat cream cheese for the frosting, but I wouldn't recommend that. I also used fresh strawberries instead of frozen.

Best Guacamole

Why give something 5 stars when so many people make changes? I have to give it 4 stars as written because I think 2 Tbsp of olive oil was too much. I made a 2nd time with only 1 Tbsp and it was better, but with all the oil in avocados to start with I'm not sure you need it at all. I also added tomatoes, but I guess that's a personal taste. I also think I'll try lime juice next time like many people suggested.

Crab Stuffed Flounder

This was great! I made more of the crab stuffing (double) for 6 total filets because we all like crab, but the taste was amazing. This was one of the best fish dishes I've ever had.

Oatmeal and Wheat Flour Blueberry Pancakes

I made them for dinner one night and when my wife and I exercised the next day we had noticeably more energy. So maybe they're a good energy food also. I used fresh blueberries and a lot more than 1/2 cup, maybe 1-1/2. I think I'd also recommend letting the batter sit for 15-30 min to give the oats time to soak in the liquid.

Golden Sweet Cornbread

Broiled Tilapia Parmesan

Very good and couldn't be easier to make. I made it for my son who isn't a huge fish fan, but likes tilapia and he said its "at least as good" as a local upscale restaurant he loves. I didn't have celery salt so I just used fish seasoning and it was great.

Awesome Carrot Cake with Cream Cheese Frosting

This is definitely the best carrot cake I've ever had or made. I made it using the widely recommended 1/3 cup oil and 2/3 cup unsweetened apple sauce and it was great. I can't imagine why you'd want to use the amount of oil in the recipe. I also used 1 cup sugar and 1 cup Splenda to reduce the calories a bit.

Pumpkin Muffins II

Really good, but I'd personally reduce the amount of cloves to 1 1/2 tsp. I made them with 2 tsp. and it was a bit too spicy for my taste. I made them again with 1 1/2 and it was delicious. I used canned pumpkin because I didn't have time to use fresh. I also got more like 24 instead of the 12 it says. Maybe they mean 12 big ones like you buy in the store. I just used cupcake size pans.

Apple Crumble Pie

Very good using the 50/50 white and brown sugar recommendations along with the extra flower. Never tried it with the listed recipe. Made it a 2nd time with granny smiths and didn't like it as much.
