Green Salsa

With a few changes to suit our taste (and what I had on hand) this was a 5-star salsa. Changes I made: used 3 fresh roasted chili peppers, one small red onion, and probably at least twice the cilantro. I put a tad too much salt in, but my husband still said it was the best salsa I've ever made. We're eating it with chips tonight and over grilled chicken tomorrow. YUM :)

Balsamic Vinaigrette

Nice and simple. Great alternative to store bought dressings that have a million ingredients (often including high fructose corn syrup).

Chicken Pot Pie IV

We really enjoyed this recipe. I followed the recipe closely but made two small changes. One, I baked the bottom crust for 8 minutes before adding the filling. And, two, I added a tsp or so of Nature's Seasoning salt and some fresh ground pepper to the filling mix so it wouldn't be bland. I always use the No Fail Pie Crust III recipe from this site (substituting 1/2 the flour with whole wheat flour). Will definitely make again. Thanks!

Maple Banana Bread

This turned out great, and I liked that the main sweetner was maple syrup. I did make a couple small changes. I added 1/4 tsp. salt to the flour mixture, and I stirred in a small handful of chopped walnuts to the batter in addition to the walnut topping. And I only used 1 Tbsp. of sugar for the topping and that was plenty. Once the bread was out of the oven and cooled slightly, I took it out of the pan and wrapped it in plastic wrap. This kept the bread moist. Delicious!

Peanut Butter Apple Dip

This is a WONDERFUL alternative to the artificial, full of high fructose corn syrup caramel dip you can buy at the grocery store to accompany apples. It's easy to make and tastes great. I cut the sugar in half and it was plenty sweet.

Buttermilk Pancakes II

For basic, fluffy pancakes this recipe is great. For our family of three, I cut the ingredients by a third (4 servings). I usually prefer a more hearty whole wheat type of pancake, but this recipe will certainly please everyone.

Too Much Chocolate Cake

Carrot Cake III

I followed the recipe exactly, except that I didn't add the nuts to the frosting (didin't seem necessary since the cake has nuts in it). The result was really nice... a very rich, moist cake that everyone enjoyed. But, beware, it is really heavy and loaded with fat.

Blonde Brownies I

I doubled the recipe and used a 9x13 pan. This made an awesome "cookie cake" for my husband who prefers cookie bar type desserts over regular cake. This may be his new birthday tradition. Everyone loved them. Beware - they're very rich!

Michelle's Peanut Butter Marbled Brownies

These were great. I made them for a party and got a lot of positive comments. My husband told me that these brownies "rocked." They do require a little bit more work and it's difficult to create the marbled look because the batter is so thick. BUT... we thought the taste and texture was excellent. I will definitely hang onto this recipe.

Scrambled Egg Brunch Bread

This was really good. I left out the red peppers, used low-fat cream cheese, and didn't fuss with cutting and folding the dough in any special way. I just folded each side over and tucked the ends under. It acutally looked really good after it baked. Everyone seemed to enjoy it. I'll definitely make it again and will probably try adding some mushrooms or substituting sausage for the ham.

Dave's Coleslaw

I made this coleslaw for a potluck and it was pretty good (on day one). A few days later I made a fish dinner and thought I would serve the coleslaw as a side. It was awesome! So much better on day 2 and 3. Yum! It's also very easy to make (especially if you cheat and buy the pre-shredded cabbage with carrots like I did. I used 2 bags.) :)

Simple Spinach Lasagna

I'm always trying new lasagna recipes because they're never just right. Well, tonight I think I found the perfect lasagna recipe. For a vegetarian lasagna, this was incredible. I did double the spices, but other than that the recipe is great as is. Everyone loved it. The taste, appearance, consistency, everything... it was perfect.

Black Bean and Corn Quesadillas

These were okay. I think I didn't care for them because they were so difficult to flip and to eat. Corn and black beans kept falling out. I think I prefer a basic cheese quesidilla with a side of beans/corn.

Creamy Sweet Potato With Ginger Soup

This was good, but we liked the left-overs even more with two easy additions. I thought the soup needed a little something, so I added a teaspoon of curry powder and a couple tablespoons of peanut butter to the remaining soup. It was excellent!

Vegetarian Sweet and Sour Meatballs

The only change I made was to use whole wheat bread crumbs. Maybe that was the problem??? I was so ready to love these, especially after reading so many good reviews. BUT... the texture was terrible, so dense and hard to chew. The flavor was okay, but overall this was a flop. I'm tempted to try them again with white bread crumbs, but I'm also scared we wouldn't like them either way.

Peanut Butter Pie VIII

This recipe was a difficult one to rate. I had this last minute idea to make a peanut butter pie for my husband on Valentine's day and this was the only recipe I could find that I had all the ingredients for. We definitely enjoyed the pie, but it's definitely not a traditional peanut butter pie. I agree with other reviewers that this pie should be called something more like peanut butter custard pie. So, I'm not a huge custard fan and I'm not sure if I'd ever make this again. BUT, the pie did taste pretty good, especially the second day. If you like peanut butter and you like custard, then this pie is a winner.

Fluffy Whole Wheat Biscuits

These were really good served with stew. We ate the leftovers with butter and jam. My toddler loved them. They're a little dense, but whole wheat baked goods usually are.

Chantal's New York Cheesecake

This was awesome. My husband and I were so amazed that we had actually made this amazing cheesecake. The only changes we made were: following the crust recipe with cinnamon and sugar from another reviewer and using 1/3 fat creamcheese. We also baked it in a water bath, which resulted in zero cracks in the cheesecake. We served with fresh berries and chocolate sauce. Wonderful!
