About this Cook
I am a stay-at-home mother of two, expecting my third girl this fall. Although I have a Masters degree in elementary education and hope to get back into the classroom someday, for now, I am content being at home and caring for my girls full-time. We spend a lot of time playing and working in our yard, exploring beautiful Colorado, reading, and - of course - cooking!
My favorite things to cook
The best meals, in my opinion, are those that are full of fresh, local, organic veggies. We are members of a local CSA, and I LOVE the challenge of using all the fresh weekly veggies in our share each summer.
My favorite family cooking traditions
Strangely, as much as I (and my brother) love to cook, I did not exactly inherit that love from my parents. We grew up sharing family meals, but it was your classic meat and potatoes, spaghetti, and casseroles. So, I honestly can't say I have a treasure of family recipes that I pull from. Of course, there are those tastes of home that I do try to recreate (but not necessarily with any original recipes). Some favorites that come to mind are a variety of Christmas cookies, a classic Thanksgiving dinner spread, stuffed cabbage rolls, and classic pot roast. I have started some traditions in my own family, which include... weekend pancakes, homemade eggnog for Christmas, summer vegetable soups, and our favorite chocolate chip cookies.
My cooking triumphs
When the temperatures outside aren't too high, I love to make regular batches of no-knead, homemade bread. I've also had some success experimenting with a variety of Asian foods.
My cooking tragedies
Too many too count! I'm definitely known for leaving burners on and getting distracted by my girls! A pot over-boiling on the stove is a common occurrence.

Moroccan Chicken and Whole Grain Couscous
I really wanted to like this but it was an odd combination of flavors. Although... I should say that my 10 month old loved it all blended together into a soft puree!

Whole Wheat, Oatmeal, and Banana Pancakes
Great recipe (with the addition of a tsp of cinnamon). I didn't have any dry milk powder, but it didn't matter. They turned out really good. This recipe made about 18 small pancakes. I froze 12 of them in hopes of toasting them later this week. Thanks for a healthier pancake option with basic ingredients.

Green Salsa
With a few changes to suit our taste (and what I had on hand) this was a 5-star salsa. Changes I made: used 3 fresh roasted chili peppers, one small red onion, and probably at least twice the cilantro. I put a tad too much salt in, but my husband still said it was the best salsa I've ever made. We're eating it with chips tonight and over grilled chicken tomorrow. YUM :)
