Easy Meatloaf
Such a great simple recipe. I've made a couple of meatloaf recipes in the last weeks looking for the taste of this one! 4 stars because I changed it up just a little bit. So easy, threw all of the ingredients into the Cuisinart and added two cloves of garlic and a little salt and pepper. Threw it in the loaf pan with the the topping and cooked it for an hour and 15 minutes -- it was perfect! So glad to have finally found this staple recipe - next time I'll be making this with turkey and adding a little heat with some jalapenos or red pepper flakes.

Pumpkin Pie Flan
Great recipe. The four star rating is only because I changed the recipe a bit. I used regular pumpkin filling and added my own spices. I make a lot of flans, so I also like a creamier taste and ended up adding the whole 10 oz. can of condensed milk. The flan came out very light and was incredibly easy to make. Next time, for a denser flan, I may substitute some or all of the evaporated milk with 1/2 and 1/2. Will make it less fluffy and more flan like. To the user who had a hard time getting it out of the pan - use a pyrex dish or loaf pan and a bit more sugar (1 cup) in the carmelization part in the beginning and be sure to coat the pan completely. This will help the flan pop right out of the dish and then there's a little more syrup to drizzle over the flan for a yummy presentation. :)

Banana Crumb Muffins
Great, no fail muffins! As one reviewer mentioned, make sure you combine until just moistened. I actually got 12 out of this recipe, and the crumb topping was just enough. I added a cream cheese glaze/drizzle and they were quite possibly the best muffins I've ever made. I bake a lot and have been trying to branch out with some new recipes - so glad I tried this one. BTW, I didn't use muffin papers, but lightly oiled the muffin cups. I read recently that paper liners sometimes do not distribute the heat correctly leading to uneven baking.
