Powdered Sugar Cookies III

These were simple to make and amazing to eat!!! I am not great with rolled out cookies...I don't have a baker's gene I suppose...so these were great for me. I rolled them in my hand, and pushed them slightly once on the pan. I also used almond extract instead of the vanilla. We are doing these again for a cookie exchange and I will be using orange, almond, lemon, peppermint and rum extracts. An easy way to make a variety of yummy cookies!!! THANKS!!

Caribbean-Spiced Roast Chicken

OK...this was my first time with a whole fryer chicken. I must have done something a tad bit wrong as it took MUCH longer to cook mine. ((I did have it snug in the baking pan and it was a 4 lb chicken instead...)) BUT....the flavors were AMAZING!!! I shoved the herbs/seasonings under the skin and let it set for about an hour. I did not use rum ((or tequila)) I just used a bit more lime juice to make it the right consistency. I think it still tasted great. I cranked up the oven to 450 for the last 15 minutes so the skin would get crispy. ((My 6 yr old would never eat the skin before and this time she said she couldn't eat her chicken since she ran out of skin...LOL)) We will DEFINITELY be using this again. Thanks!!!!

Grilled Lemon Chicken

I forgot to put he red bell pepper in my marinade but not sure if it really mattered completely. I marinated the chicken for about an hour and then grilled it on my George Foreman. The kids really liked it and I didn't hear any complaints from the hubby ((who had to eat his as leftovers)) The lemon was pretty strong, but with the name it should be expected. We will probably keep this in our rotation. Thanks

White Cheese Chicken Lasagna

I have to admit that we skipped the spinach totally in this recipe. I figured if my family saw something green in the middle, they would refuse to eat it. That being said...SOMETHING needs to be added to this in order to cut the richness. I did happen to rough chop a red pepper to layer in...but it wasn't nearly enough. I found the recipe very bland...my husband thought it was decent enough. We may try this again, making sure to add another element of flavor somehow. Thanks for a variety on our lasagna recipes.

Shoyu Chicken

I did make a few changes...but just because I wanted to use what was on hand rather than make a trip to the store. I halved the recipe and made it with BS chicken breasts. I cut them in half and grilled them on the George Foreman to make sandwiches out of. I skipped the optional heat elements as my family does not like things too spicy. ((I would have enjoyed it though...)) Everyone LOVED the flavors. My kids ate more than they normally ever do so this is a definite keeper! Thanks

Limehouse Chicken

I have to be honest that I did not make this as the recipe stated. I read it and then began making it while doing 8 different other things. Here is what I did: I used breasts (not thighs) and did not measure any of the ingredients. I only drizzled a tad bit of oil in the pan to brown the chicken (wish I used more) Once I transferred the chicken to the baking dish, I did not have a fresh lime so I just sprinkled more lime juice over the brown sugar. I glanced at the recipe and saw chicken broth so I poured some in the pan and sent it to the oven. I probably didn't put near enough liquid in that was called for...BUT...the chicken still turned out rather well. The flour was a bit gummy in spots but overall, not bad for not reading the directions clearly. I will try this again and really follow the recipe!! Thanks...

Herb Roasted Pork Loin and Potatoes

This was AMAZING. I made sure to rub all the seasonings on and then sear the pork loin before baking. I sprinkled a little extra seasoning over the meat when I added the potatoes. I also added peeled carrot chunks, onion wedges and celery chunks. The meat was super moist and tender...and very flavorful. My kids ((3 & 6)) ate 2 slices each!! WOW...we will definitely make this again!!

Microwave Popcorn

THANK YOU!!! I was recently stricken with a microwave that no longer wanted to turn. With that, I was no longer able to pop bagged popcorn without the whole thing catching on fire. UGH...not wanting to buy a plug-in popper, I went in search for an easier way to feed my children popcorn. THIS IS IT!!! I have only done it once so far ((and there will be any more times coming)) This time I used vegt. oil and a slight sprinkle of garlic sat. Then after it popped, I added some of the Kernel Seasonings...white cheddar on half and the kettle corn on the other. Both were wonderful...Thank you so much for this great tip!!!

Sweet Gravy

This was GREAT!! I was making biscuits and gravy for the kids and realized I didn't have any sausage. Unsure of what to do then, I came across this recipe. I have never had a "sweet" gravy before but figured, what the heck. OMG!!! I added some cinnamon to the mix and I swear it tasted like we were eating cinnamon rolls!! I was dying to find out what else I could dunk in this "gravy"...I have to say that this made WAY too much for 3 of us to eat, you know since I didn't pay attention to the serving size. It is SOOO sweet that you can't eat too much of it at once though. But I will make this again for sure...just half sized!! THANKS!

Grilled Brown Sugar Pork Chops

I took some advice that others had given. I wanted to marinate the chops, as I would be grilling them indoors on the George Foreman. So I cut out the oil, cornstarch and water. I marinated them for a couple hours. I must admit that I ran out of soy so I used all I had which was teriyaki. I think that it still turned out pretty good. I will try this again with soy and decide which I like better. Thanks...

Chesapeake Bay Pork Chops

I was only able to marinate these for about 2 hours. I cooked them on my George Foreman grill and they were wonderful. They had lots of flavor and still very tender and juicy. Thank you for another pork recipe to put into rotation!!

Fried Rice Restaurant Style

This turned out pretty decent. It made LOTS...we normally eat quite a bit of rice so I left the recipe as it was, but we have lots leftover. I also made the mistake of thinking that I could get it all into one pan and I was sadly mistaken. Next time I will cut the amounts in half or separate it into 2 pans to fry. No one in the house but me likes peas so I just used frozen carrots and cut them a little smaller. I also ran out of soy sauce ((as I used it in the general tsao's chicken from this site)) So I made sure to add the extra sesame oil at the end. It was a tad sticky...but that could have been from overcrowding in the pan. We will definitely use this again!! Thanks!!

General Tsao's Chicken II

This took me twice as long to make but that was mainly because I was overly cautious about the whole process. I bought bone-in thighs so I had to spend extra time cutting those out. And I made double the amount as my family LOVES chinese food. I doubled all the sauce but used less of the chilies ((as I didn't want it too hot for my kiddos)) I cut only one pepper into pieces to put in with the sauce...I think that it needed much more heat as it was pretty sweet. But no major complaints. I will have as much of this prepped as I can next time...and YES, there will definitely be a next time!! =)

Cheddar Bacon Hamburgers

OK...I changed this up by using ground turkey but the flavor was still so great that the rating will still be high. I didn't measure anything...just eyeballed it. I had about 1.5 lbs of ground turkey and knowing that it can be a bit bland, I added extra of each spice. I made 6 patties out of it. I grilled them on my George Foreman and they turned out GREAT!! Thanks so much...

Spiced Apples

These turned out better than I had thought they would. Kids absolutely LOVED them. I didn't have the full 8 apples...but I still used the same amount of red hots. They were red (not pink) in color and took less time to cook in the microwave. I could only eat a few pieces as they were VERY sweet. Next time I might omit (or at least lessen) the amount of sugar. Thanks!!!

Grilled 'Fusion' Pork Chops

This turned out GREAT!! I actually made the sauce up beforehand and put with the chops in a freezer bag and just froze them. Then when I was ready, I just let the meat thaw in the marinade. I cooked them on my George Foreman and they were fabulous. Very flavorful and still very juicy...which can be hard with chops on the GF grill. Thanks...we will use this lots!!

Owen's BBQ Chicken

I tried to simmer the sauce for as long as possible but realized that I wasn't going to have enough time. I ended up throwing the sauce with the chicken after about 15 minutes. Let them sit together for about 45 minutes and then got them on my George Foreman. I used boneless chicken breast halves...just adjusted the time as needed. There were NO leftovers. I think that the flavor could have been stronger...but that mainly has to do with being limited on time. We will try this again with the full time allotted!! THANKS

Chicken Enchiladas II

I used small corn tortillas to make these enchiladas. But no one in the house cared for the texture. I also used cream of chicken, as most in house house do not like mushroom flavors. The filling was a little bland so next time we will add more spices to it. Overall, it was a good base recipe. We will try this again. Thanks.

Marinated Spicy Pork Chops

These turned out AMAZING!! I added the marinade to my chops before freezing them. I thawed them with that marinade before putting them on my George Foreman grill. They were flavorful and moist!! This is a keeper recipe...THANKS!!!!

Easy Honey Mustard Mozzarella Chicken

These turned out pretty good. My husband cannot stand when bacon is in recipes yet doesn't get crisp so I skipped the bacon. Right before I added the cheese, I sprinkled some bacon bits on to give it that extra flavor. I turned it under the broiler the last 5 minutes to get is good and bubbly. Kids ate ALL of theirs and the hubby got seconds!! =)
