I am the mother of three wonderful children. My girls are 14 and 4. Our only baby boy is heading towards birthday #2 in May!! I work from home and love to cook good meals for my family.
My favorite things to cook
My family is a little picky when it comes to their food, so my main dishes include chicken and pork. I try to sneak in meatless recipes and more hamburger ones too. They will try it if it's the only thing to eat!!

Powdered Sugar Cookies III
These were simple to make and amazing to eat!!! I am not great with rolled out cookies...I don't have a baker's gene I suppose...so these were great for me. I rolled them in my hand, and pushed them slightly once on the pan. I also used almond extract instead of the vanilla. We are doing these again for a cookie exchange and I will be using orange, almond, lemon, peppermint and rum extracts. An easy way to make a variety of yummy cookies!!! THANKS!!

Caribbean-Spiced Roast Chicken
OK...this was my first time with a whole fryer chicken. I must have done something a tad bit wrong as it took MUCH longer to cook mine. ((I did have it snug in the baking pan and it was a 4 lb chicken instead...)) BUT....the flavors were AMAZING!!! I shoved the herbs/seasonings under the skin and let it set for about an hour. I did not use rum ((or tequila)) I just used a bit more lime juice to make it the right consistency. I think it still tasted great. I cranked up the oven to 450 for the last 15 minutes so the skin would get crispy. ((My 6 yr old would never eat the skin before and this time she said she couldn't eat her chicken since she ran out of skin...LOL)) We will DEFINITELY be using this again. Thanks!!!!

Grilled Lemon Chicken
I forgot to put he red bell pepper in my marinade but not sure if it really mattered completely. I marinated the chicken for about an hour and then grilled it on my George Foreman. The kids really liked it and I didn't hear any complaints from the hubby ((who had to eat his as leftovers)) The lemon was pretty strong, but with the name it should be expected. We will probably keep this in our rotation. Thanks
