Gourmet Mushroom Risotto
I didn't use quite as many mushrooms, and chopped them (not sliced) - one carton of white mushrooms and 12 oz of portobella-smashing success. This is a MUST try, and I'd NEVER made risotto before.....would give 10 stars if I could!

White Chili I
I added a LOT more cumin/cayenne (and white pepper!) to taste because I like chili hot, and it was great! Got rave reviews at the chili cookoff at work, I highly recommend this recipe and will definitely make it again. Would try adding more dried cilantro next time, didn't feel like that taste came through much.

Fluffy Canadian Pancakes
Very fluffy! Perhaps a bit of vanilla/sugar for a sweeter taste, but we loved these and will use the recipe, amended, as 'ours'!
