Too Much Chocolate Cake

FANTASTIC. I always substitute some mayo for some of the sour cream (about 1/3 C.). Great dusted with powdered sugar or drizzle some melted cream cheese frosting over it.

Savory Garlic Marinated Steaks

I didn't have the liquid smoke but it was still great. It didn't taste like balsamic vinegar or soy... just a very good enhancement to the NY steaks.

Peanut Butter Kiss Cookies

These stayed chewy for me. I did the white/brown/confectioners combo. And instead of kisses, I made thumbprints and filled with melted chocolate frosting. Super easy, attractive, and SO GOOD.

Pan Seared Scallops with Pepper and Onions in Anchovy Oil

Really tasty! My kids never even knew there were anchovies in there. I agree that the peppers & onions should be cooked first & set aside, the scallops cooked next, then recombined. I served over thin wheat spaghetti.

Tender Onion Baked Chicken

Really surprisingly tasty and satisfying. I omitted the extra salt & pepper and only used 1/2 packet for 4 chicken breasts. Just sprinkle on as you would any seasoning, you'll know when to stop. Pour the melted butter on first so you don't wash off the soup mix, but go easy enough on the butter that the onions have a chance to get crispy. I served w/ plain white rice and a salad. 4 breasts only took 23 minutes to bake, by the way.

Amazingly Easy Irish Soda Bread

Delicious! I added a cup of raisins, rinsed with hot water, before the milk. Also added 1 T. lemon juice to milk instead of buttermilk. Basted w/ half the milk/butter mixture but might not even bother next time.

Waikiki Cornbread

This is similar to the cornbread our sorority house cook used to make. We LOVED it and would fight over it. Hers had less baking powder (1 t.) and cornmeal (3 T.) and more milk (1 1/2 C.). Maybe that makes it less crumbly because I don't have that problem. Everyone who tastes it asks for the recipe. One family friend even made it a new tradition at her house for Thanksgiving. But it is sweet-- I even eat it with ice cream sometimes :)

Cheese Ball I

I rolled it in chopped walnuts & parsley. Pretty & yummy. To those who said it tasted like an MSG Ball: Come on, it's a cheeseball. People who eat cheeseballs usually aren't bothered by synthetic-tasting things. I sort of agree with the MSG comment but I had to admit, I couldn't stop eating it. Then I made another cheeseball with more "pure" ingredients-- and found myself craving the Ranchball. So this is the one in my recipe file, not the pure one!

Honey Bun Cake I

I loved it. But I love sweets, boxed yellow cake mix, and cinnamon. If you dislike yellow cake mix you probably won't like it. I put all the batter on the bottom, topped it with the honey/sugar/cinnamon, and ran a knife through just the top 3 things to mix a little. Best warm.

Graham Streusel Coffee Cake

I was a little disappointed but my husband raved. It was good but tasted a lot like yellow cake mix; I guess I'm used to sour cream coffee cakes. I didn't have trouble with the filling sinking. Maybe try grinding the graham crackers fine enough and sprinkle the filling over the batter by rubbing it between your fingers, not just dropping by the spoonful.

Chicken Breasts Pierre

Really tasty. Nice change from the same old tomato sauce. I substituted celery salt for regular salt and only used a half teaspoon. Also did chicken broth instead of water.

Pumpkin Crumb Cake

Delicious. I baked it in a springform pan, giving it the extra 10-15 min. the others recommended, and chilled it. I served it at Christmas instead of pumpkin pie and everyone raved. I had several desserts but everyone talked about this one. Even though I love sweets, it was even a bit too sweet for me so I will probably cut back next time, but better too sweet than not sweet enough in my book!

Chicken Souiza Cornbread Bake

Really pretty good! Nothing I'd serve to company or anything but good for a weeknight meal. I put it all together at about 1pm and threw it in the fridge, then baked it at 5pm and it turned out fine. I took the suggestions and added the cream of chicken soup.

Korean BBQ Chicken Marinade

LOVED it. I used half the recipe for 2 large chicken breasts and had a little sauce left over, after spooning as much as I wanted over the steamed rice I made with it. I only marinated for about 45 minutes and it was fine, especially since I had sauce alongside (which I thickened with cornstarch).

Pumpkin Loaf

Really good. Double the cinnamon and add a quarter tsp. nutmeg though. Everyone said it was moist but mine wasn't *that* moist, even though I only baked it 53 minutes. So watch the time.

Hamburger Vegetable Soup

Really good for how easy it was. I didn't have tomato sauce so I substituted pizza sauce, and only used 1 packet of onion soup mix, and used ground turkey instead of ground beef. Nice hearty hot meal.

Apple Cake III

I hated it but my husband loved it. It tasted like canned pie filling to me, kind of tinny with an aftertaste. Yuck. I wanted to throw it away but my husband, who doesn't even like desserts much, wouldn't let me.

Quick Chicken Divan

My husband and I love this and eat it all the time. I add about 1 t. curry powder to the sauce and use fresh broccoli. Really easy and healthy for a weeknight dinner too. (That is, healthy if you cut back on the cheese & use light versions of the cream soups & mayo.)

Barbeque Halibut Steaks

Delicious! Not as sweet as I'd expected (but that was a good thing). Even less sweet than teriaki sauce. I broiled them in the oven and kept basting with the sauce. Other than broiling instead of BBQing, I followed the recipe exactly and thought it was great as-is. I served with rice and broccoli stir-fried with oyster sauce & soy sauce.
