Lime-Marinated Grilled Salmon
Very nice. I made this the other night using a salmon fillet. The only change I made was I used a fresh garlic clove that was minced. I poured it over the fillet and let it sit for about 15 minutes, and then popped into a 425 convection oven and baked it covered in a casserole dish. Served with basmati rice, oven roasted carrots and mixed veggies. A very nice, quick easy meal. I think the sauce would make a nice dressing for a salad too.

Roasted Squash Soup
I peeled and sliced a butternut squash in half and roasted it along side a bulb of garlic, one onion quartered and 1 red pepper sliced up. I brushed the veggies with a bit of olive oil. When everything was done I pureed them together with my hand mixer (braun multi-practic) and added chicken stock. It tasted really good at that point with all of the roasted vegetables but I also added a 1 tablespoon of mild curry paste and 1/4 tsp of cinnamon and let it simmer for 10-15 minutes. I served it with a small dollop of sour cream. It was delicioius!

Sweet Potatoes with Sausage and Peppers
Very nice and easy to make. I used new potatoes as I didn't have any sweet potatoes and it was very tastey.
