About this Cook
I'm a 30-something mother of 3, a high school teacher and a perpetual student. I'm in a Ph.D. program now and may actually have to stop taking classes one of these days!
My favorite things to cook
I love cooking soups & stews, experimenting with marinades and I really enjoy a good casserole (wish my kids liked eating them!) I love baking cookies--and the kids love those, too.
My favorite family cooking traditions
Christmas cookies--my mom must have made about 20 different kinds and made elaborate cookie trays for friends. I make about 6 different kinds--and that's enough for me! Making cookies with the kids (having them help with cutting out cookies & decorating them) is also a fun tradition.

Ham and Swiss Stromboli
What a versatile recipe. I used refrigerated pizza dough instead of the french bread and it turned out great. Experiment with what you know you like--ham & swiss with ranch dressing makes a terrific breakfast bread for an easy brunch dish. The kids and my husband liked this.

Mini Pineapple Upside-Down Cakes
I had high hopes for this dessert and am a little disappointed. After the first time through I experimented with different ingredients and techniques. They were tastier with a pineapple cake mix, if you can find one. I used normal muffin tins, so used only a bit more than a half a pineapple ring in each cup--but they weren't super pretty--the pineapple looked awkward, not pretty & round. I tried a batch in mini-muffin cups with teeny pieces of pineapple, but they didn't come out quite right--the cake part wasn't substanial enough, and the the pinapple pieces just looked weird. In one batch I was a little too generous in spooning the sugar & butter mixture into the cups, and it bubbled out onto the pan and onto the oven. I wanted to serve these for dessert at a formal shower, but I have decided against it--they're cute and yummy, but not quite as pretty as I had hoped.
