Lentil and Smoked Sausage Soup
Wow! This was soooo goood. Is has that robust flavor that you usually don't get until it's been sitting in your fridge overnight. And it was so EASY! I love that. FYI, I used Turkey Sausage and leftover red onion, and then topped of individual bowls with a squeeze of lemon.

Miso Soup
It was hard to find Dashi, but worth it. I doubled the amount of Miso and reduced the tofu to 6 oz. We just like it stronger. Next time, I'll try adding seaweed also. Thanks for the recipe!

Veggie Pesto Soup
I absolutely LOVE this recipe. I use Basil pesto instead of sundried tomato, and use more of it, add celery and use chicken broth instead of veggie. And right before eating, I squeezed in some fresh lemon juice. Oh--and i used sweet potatoes instead of regular. I love how this is FILLED with veggies and has tons of flavor from the pesto. I use fresh pesto from a local international foods deli.
