Easy Egg Drop Soup

YUM! this was really good. My only changes were to add a little ginger more soy sauce. Quick and easy, this will be a regular base for all sorts of additions.

Delicious!! Be careful with the pepper and the lime to make sure that you have a good blend, not too hot or citrusy. Great potluck food.

Margaret's Keftedes (Greek Meatballs)

It's a 5 with changes. I used 2 eggs and although it set with cooking, the mixture was very difficult to form into meatballs, so next time will use 1. Also added more salt. Everyone loved them. Thanks!!

Most excellant!! I had to substitute white sugar and molasses for the brown sugar and orange peel for the juice, marinaded over 24 hours, good eats!

Granola Bars III

I haven't tried as posted but tried the suggestions of SIXMITTS...most excellent. No raisins because I don't like them. Used pumpkin seeds instead of walnuts and subbed some ground flax seed for the wheat germ. If you use dried fruit, you could cut back on the sugar even more. Really versatile. Thanks for the recipe.

Flounder Florentine

Good easy recipe. I used a mix of perch and tilapia because it's what I had. The sauce would be a little bland as written, so I added about 1.5 tsp of Old Bay seasoning. I omitted the nutmeg and pepper because they are ingredients in the OB seasoning. I also added a few TBL of parmesan to the sauce...YUM!!!

Red Lentil Curry

This is delicious. I like mine a little more runny, so I added more water and I also added garam marsala and cilantro. Not sure what type of curry paste is called for, but I only had sag ghost curry paste. I realize there is probably no one way that this curry should look, but some of these pictures don't do this dish justice.

Ham and Potato Casserole with Gruyere

Delicious inexpensive dish for a potluck. I got asked for the recipe. I used 4 tsp of dried parsley for the fresh and swiss instead of gruyere. I mixed the parmesan in with the dish. I think I will try some fresh chives next time.

Mom's Peanut Brittle

Delicious! It's important to allow the butter to brown to give it the proper color. I took it to 300 degrees. Make sure that the baking soda is still good and I have been told (by granny) that the humidity in the air can also make a difference.

Turkey Curry

This is a 5 with changes. I followed the recipe as directed and didn't like the texture. I added a can of coconut milk, about 2-3 tsp of garam masala, additional tsp of tumeric, and about 3-4 Tbl of ground cashews (to thicken it up).

My first batch was too light colored. From reading other recipes, I put the butter in with the peanuts and let it brown and added 1/2 tsp of vanilla after removing from the heat

Hot and Sour Tofu Soup (Suan La Dofu Tang)

Delicious!! Be sure to add the chili paste and rice vinegar to taste. I also added miso paste and bits of dried seaweed (there's a better asian name for this) that I didn't know what to do with; not traditional, but great addition.

Turkey and Quinoa Meatloaf

Really good. I used a cheap turkey chub with red quinoa. I'm going to cook the quinoa in beef broth next time. I did use less salt than the recipe stated. Hubby who doesn't like meatloaf loved it.

Pork Marsala

Delicous!! I had to cook in two batches of pork because my frying pan wasn't big enough I think it is impotant to use a metal pan for the browning part. Teflon just doesn't work well for browning. Great recipe!!

The Best Thai Peanut Sauce

This is 5 star with the change of using a whole can of coconut milk, with no water. I haven't tried it using the recipe amount, but I think that there would be too much peanut butter. It is better not cooking it, because the oil separates from the peanut butter. Great recipe with complex flavors!

I made this for my coworkers and they loved it. I only had powdered buttermilk, so I used 1tbl added to the dry ingrediants and 1/3 cup of water with wet ingredients.

Mushroom Salisbury Steak

I agree with some of t others about the cornstarch gravy. The next time I will definitely make the with flour. My only changes were that I fried them, used fresh mushrooms and I added a little garlic powder to the meat. This tasted great!
