Greek Style Potatoes

These are delicious! I take th foil off at the end of cooking and let the liquid cook off. This makes the potatoes more flavorful. Very authentic!

Zesty Coleslaw

I don't even like horseradish, but loved this recipe. I did not use miracle whip and only used about 1/2 of the sugar called for. This would have been waaay to sweet otherwise. We are not much into sweet stuff though.

I added some hot sauce and Dijon mustard. This was quite good in a home cooking sort of way, but I really don't think that I would serve this to company as an appetizer.

Jeanie's Falafel

OMG!! This was fantastic! I made this for the first time for a vegetarian friend and she just raved about it (the meatatarians loved it too)(: I added a little too much water, fortunately I had some dry mix to bring it back to the right consistency. I made the mixture the night before and cooked it the next day. I did not need any egg, shaped into patties and cooked it in my deep fryer. Reheated in the oven the next day, still tasted great. Thanks for the wonderful recipe.

Pasta with Pesto and Scallops

Great easy recipe. I used scallops and shrimp and following others advice and used less pasta. I also used some johnny's greek seasoning. This would be good with zucchini as well.

Lemon Ginger Shrimp

Excellent! Not spicey, great complex subtle flavor to have with any fried rice side dish. Of course you have to be careful not to bbq shrimp for too long. I am going to marinate my veggies in this the next time as well. My only change was using red onions.

Creamy Slow Cooker Marsala Pork

This is delicious!!! I think it is very important to carmelize (brown in oil) the onions first, it really adds to the appearance. The next time I make this I will use extra garlic and salt. Thanks for the great recipe.

Asian Mushroom Soup

This was delicious. The changes I made were as follows: 1 extra Tbl of mirin 2 extra tsp of chicken boullion 1 extra clove of garlic 1 extra Tbl soy sauce Also used 3 cups of pre-soaked mixes dried Costco mushrooms and frozen instead of fresh spinach.

Bubble 'n' Squeak

Great recipe. I had leftover potatoes, kielbasa, and brussel sprouts from a crab boil. I added some leftover mash potatoes, chopped carrots, peas and stirfried coleslaw with some seasoning salt & pepper. I used a little bacon grease to carmelize the onions and cook the meal in. Looks a little strange, but we can't wait for lunch tomorrow.

This is really good recipe. I used hot curry powder, it was not for the faint of heart. The Texans loved it. When using canned beans, you may not need a lot of salt.

Moong Dal

Delicious! I soaked the peas for 4 hours, it still took much longer than recipe called for, at least 45 minutes. I think it is important to use cumin seed as recipe states, rather than ground cumin. I used 2 jalepenos and 4 cloves of garlic. I wish I new what a "pinch" is, but it turned out to be the right amount of hing powder. Tasted great the next day. This was as good as the restaurant near my office. Thanks for saving me some money on takeout!

Amish Macaroni Salad

Really good. This was quite sweet without adding sugar, I think the submitter meant that you would add sugar if you were using plain mayo, not salad dressing. Used 2/3 cup of all vegetables and added some imitation crab. I might try 1/2 mayo next time.

Beef Enchiladas I

I cut the recipe in half, it worked out to about 8 tortillas in a 7x11 pan. Used round steak, mixed 1 cup of hot enchilada sauce with 1 cup of tomato sauce. didn't use the salsa, it was saucy enough without it. Less sauce would still be good. Served the sour cream on the side.

Slow Cooker Thai Pork with Rice

Really good. I did make a some of changes though. I used a 2lb roast with some ginger-garlic paste, adding no vegetables. At the end I stir-fried the peppers and some julienned (matchstick)carrots. After all was combined I added thai chili paste and fresh cilanro. The peanut butter thickens as you cook it, so I will try making a little extra sauce the next time. Great recipe.

This was very good, but too much fennel. I would try 1/2 the next time. I also substituted 1 tsp of dried herbs for each tbl of of fresh.
