Baked Chicken Nuggets

I made these for my boyfriend who loves chicken nuggets. At first he said they were too dry, but tasted alot better the next day. I followed the recipe exactly. Next time I might use olive oil instead of butter. I will try it again for sure.

Mahogany Chicken Wings

This recipe turned out well. I made them as an appetizer for Thankgiving and everyone loved them. I made 5 pounds of chicken wings & marinaded them as instructed. I followed the recipe exactly and came out with great results. I was weary of using the molassess and the honey, but I am glad I followed the instructions. If you like things spicy, I would suggest doubling the amount of hot sauce. 7/2/07 UPDATE: I made these for a grad party and everyone loved them. I went through 8 pounds of wings. My new suggestions are to turn them every 10 min. (especially if your oven is older like ours. The temp is all off) This really helps keeping them from sticking too much and getting covered in a blackened mess. Also Pam works much better than butter or margarine.

Chocolate Dipping Sauce

All I can say is MMMMMM! This dipping sauce is a lot like chocolate pudding. I used fat free evaporated milk and added more as needed. Without the extra milk, it has a dark chocolate taste which is much too bitter for me. I served this with strawberries, bananas, angel food cake and graham crackers. One guy said "Now this is classy!" A must for any chocoholic.

Hot Spiked Cider

I tried this for Thanksgiving 2006. I made it in the slow cooker while everyone was out of the house. I used Tazo brand Sweet Orange Spice Tea. It was so delicious, I had at least 3 cups by the time everyone returned home. Because of the children I left out the rum. But I have no hesitation adding it next time. I bet it's even better with it!

White Berry Pie

WOW. Very good. I decided to make this for Easter and bring to the family gathering. I did make some minor changes though. I used low fat ingredients whenever possible, including the grahmn cracker crust and cream cheese. I also sliced the strawberries into rounds and layered them on top. When I was mixing it, the batter was quite stiff and hard to mix. But after chilling for a few hours I think the berry juice softend it a bit & was a bit jiggly.

Peanut Butter Marshmallow Squares

It was an alright kinda thing. Very sweet, almost too much for me and I'm a total sweet tooth!! Next time I make this I might add a little salt, 1/2 tsp. maybe?? If you are like me and like your bars full of ingredients, add more coconut and maybe marshmallows. Otherwise it's too much creaminess! It's almost like having brownies with no extras. I did the same as the others and poured the mix on top of the marshmallows and mixed it up.

Anna's Chocolate Chip Cookies

These cookies did not turn out as I planned. I made the recipe twice, just to make sure I made them correctly. I think it calls for way too much flour. They turned out very cakey and not as sweet as I as hoping. I ended up making another recipe that only called for 1 1/4 cups flour and that turned out much better. This just did not have the texture I was after. :(

Dill, Feta and Garlic Cream Cheese Spread

I liked this recipe because it was easy and versatile. I cut it in half because it seemed like it made alot. I know that dill has so much flavor, so I added a little bit at a time. Next time I make this, I think I will put the feta cheese through the food processor to break up any chunks. I think I would like it a little smoother. Next time I would also add a tsp. of cracked black pepper.

Awesome Green Beans

This is a very versatile recipe. I can't imagine all the creations you can come up with. I made this as the green bean dish for Thanksgiving dinner. It seemed to be liked by just about everyone. I decided to use a chicken mushroom sausage, but I definitely think I will try it with the spicy sausage next time. I might even substitute pearl onions for the chopped ones.

Crushed Pineapple Sour Cream Pie

Very good and very easy to make. This isn't a super fancy dessert, probably not something I would serve to guests. It's looks a little unappetizing!!! I used lite sour cream and mixed by hand like the others. I also used twice as much pineapple as it called for, which helped bind it together better. I also used a graham cracker crust, which really made it good. After a few hours in the fridge, I cut a slice and it almost fell apart. But the next morning it was set and very good. Thumbs up from my roomies!

Basil Parmesan Spread

Cartha, what a wonderful recipe. My family says I am not allowed to come to the party unless I bring the dip! I have made this for every party and always get great comments. For the sun dried tomato paste, I used a jar of chopped sun dried tomatoes. Drain the tomatoes of all the oil. Don't mix all the layers together!! The presentation is very pretty. Even my brother loves this and he is 17!

Apple Bars

Great recipe! These aren't like other fruit bars (like lemon). They don't have a crust like others. They are more like an apple muffin cut into bar shape. But very easy to customize to your own tastes. I used 3 VERY large granny smith apples, chopped. (I like lots of fruit in my pies and bars!!!) I added a little more flour to supplement for the extra apples. I kept the 8x8 inch pan and sprinkled brown sugar on top, baked just over an hour. Kept them in the fridge, I love them cold. Next time I want to make caramel sauce to go on top.

Fried Green Beans

This was a very easy recipe. I added about 2 tablespoons white wine and 1/2 tsp chopped garlic. I served it with Salmon w/lemon, basil cream sauce from this site and white rice. At first I thought that it would be too much lemon, but it was good!

The Best Banana Pudding

I took this dessert to my family's Thanksgiving dinner. I was a little worried since it's not a traditional Thanksgiving dessert, but decided to make it anyway and I doubled the recipe. I got thumbs up from all the kids! They loved it. I forgot to buy the sweetened milk, and it turned out fine. It would have been much too sweet with it. I also used fat free whipped topping and used about 15 bananas for a double recipe. I can't wait to make this again.

Aunt Kate's Green Beans in Tomatoes

This recipe was very good. My roomate said her mother makes this all the time and mine was even better! I added 1 tbsp of parsley flakes and a bit more basil. All I had was a 28 oz can of tomatoes. I added 1/2 cup water and let it cook down until it was less than half. Next time I will use a regular 14 oz can, because it did turn out very tomatoey.

Apple, Avocado and Hearts of Palm Salad

Although I didn't use the dressing (stuck to ranch) the flavors in the salad were wonderful. My boyfriend was skeptical of the apple in the salad, but he ended up having seconds and so did I. The creamy avocado, tangy hearts of palm and sweet apple blend together so well. I used extra avocado and cut the apple down to one. I think it would also taste good with some crumbly cheese like bleu or goat cheese.

Rempel Family Meatloaf

Everyone loved this dish, even those who don't like meatloaf! I used 2lbs. ground sirloin and it turned out well. It says add water to the mix if necessary, so I did and then there was too much juice. Next time I won't do that. I will make it again.

Cold Tuna Macaroni Salad

I just got done making this pasta salad. It was so quick and easy, not to mention delicious! I think I added too much mayo, so I used 2 cans tuna to substitute. I was unsure about using light mayonnaise because I like the full fatty kind. Even with light it tatses great, I might even use fat free. I will make this one again.
