Roasted Garlic Cauliflower

This was a nice change for cauliflower (even though I forgot the Parm!) and will definitely make it again. I do the same for brocolli and like that it draws out some of the moisture and condenses the flavors.

Ortega® Fiesta Bake

This has been in my recipe box since 2002 ~ and finally made it last night! It was surprisingly good. Next time I make it though, I will double the beef layer ingredients to make it a bit more substantial. Good!

Strawberry Spinach Salad

Replaced shrooms with red onions and left out the bacon. Use a GOOD quality bottled dressing and you're good to go! I did toss with about 1 Tbs. of poppy seeds for a little "crunch." My mom doesn't veer off the "normal" food path and this is NOT something she'd eat. But, to be polite, she tried it and raved throughout the whole meal. A keeper!

Basil Shrimp

I upped the garlic, lowered the mustard and used 2 pounds of jumbo shrimp. I tossed them onto a HOT veggie-tray on the grill for a few minutes....tossing around a bit till just cooked. SIMPLE & DELISH!!!!!!!!!!!!!!!

This just didn't work for us....it seemed like we were eating a dish that was supposed to be warmed up, but was just cold out of the fridge.....glad I tried it, but not again :(

Strawberry Pretzel Squares

No problem with soggy crust. I read to spread the cream cheese mixture to the edges to prevent the jello going into it. I used 2 full blocks of LF cream cheese & the full tub of light cool whip. Also, I used 2 boxes of SF jello. The additional ingredients made each layer more distinct and delicous!!! My husband never knew it was more "calorie conscious!"

Chocolate Eclair Dessert

This was ok...it wasn't as "great" as the other reviews indicated. It was super simple to make. I'm glad I tried it, and it wasn't bad, but it wasn't spectacular. I won't be making this again.

Beef Taco Skillet

This was surprisingly good...I don't think of it and therefore don't make it as much as I should!! Great with corn and a loaf of bread or a nice salad. Even my picky children eat it without asking with the "tortilla" things are!!!! I have altered it to omit the salsa and cheese, and replaced it with a pounch of taco seasoning. Just had it the other nite....YUM.

Quick and Easy Alfredo Sauce

I must say I was way hesitant to try this (with the cream cheese) and am more than pleasantly pleased! It was delish!!! After enough stirring, the cc and butter blend to what looks like melted marshmallows, and then I just added milk to the right consistency. I upped the meal by turning it into Pasta Primavera -- with the addition of sauteed red bell peppers, mushrooms, onions, garlic, asparagus & shrimp -- a PERFECT Lenten meal. I'm dying for the leftovers today for lunch!!!!!!!!!

Cheesy Sliced Potatoes

GREAT!! My family loved these....Instead of dried minced onion, I thinly sliced a medium onion and cooked it with the potatoes from the beginning. They were subtle, yet gave a tiny bit of crunch. My onion-phobic daughter never even knew they were there :) I must fess up that I used a full cup of cheese though -- 1/2 in with the sour cream and the other 1/2 on top. I will skip the extra salt next time (but I liked it this wasy!). Definitely a keeper!!

Baked Buffalo Wings

I used 4 lbs of wings with this recipe and the finished product was great....received rave reviews from everyone! They were spicy enough to know it, but not too spicy to keep folks from eating them. Easy....I did broil for a couple of minutes to really crisp up. I did follow the recommendation to really dry the wings before dredging...I can see that would make a difference.

Cool Whipped Frosting

Simple and quick!!! I substituted chocolate pudding mix and frosted a chocolate cake for my son's birthday. It was light and delish! It makes a lot of frosting....enough to fill and coat a 3-layer cake.

Pumpkin Dump Cake

This was delish!!! Super simple and perfect for a crowd. I did omit the pecans, due to allergies, but otherwise followed the recipe perfectly. Served with a side of whipped topping...yummy! My only comment would be with the name....I told my guests that it was PUMPKIN CRISP, which they ooh-ed and aah-ed over. When I told them the "real" name, they all agreed the Pumpkin Crisp suited it better.

Adrienne's Cucumber Salad

This was really yummy, but I used less sugar (1/2 cup). I'm making it again tomorrow, and will go down to 1/3 cup and see how that goes. I grow a TON of cukes each summer, and am always looking for new ways to prepare them. We have them almost every night.

Slow Cooker Spaghetti Sauce I

This was a fabulous idea! I did reduce the size of the batch. I used herbs that I like in my sauce. Before making this, I was surprised by the comments of how strong the spices were, because I usually put a ton in my sauce. I must agree, it was a bit "herby." I think the reason is because of it cooking covered in the slow cooker (versus my trying to cook down the sauce on the stop top). Either way, I used it to make baked ziti for Christmas Eve, and it was a HUGE hit! I will make my sauce this way all the time...what a great time saver.

Saltine Toffee Cookies

My friend brought these over last night...instead of the pecans, she uses 1 package peanut butter chip along with the chocolate chips. THEY ARE DELISH!!!!!!!! TOTALLY ADDICTIVE!!!!!!
