Mom's Pineapple-Carrot Cake
Everyone loved this recipe, even with my changes listed below:! I used 1 c. whole wheat flour + 2 c all purpose flour. Also used 1 c unsweetened apple sauce + 1/2 c oil Baked in 15x10 pan for 40 minutes. The texture is not oily at all.

Buffalo Chicken Fingers
Tastes great for being low fat!!! Very tender. I substituted whole milk for the egg. Also, I REALLY kicked them up (SPICY HOT) by coating them in authentic buffalo sauce after they came out of the oven and serving with blue cheese dressing. The simple buffalo sauce recipe is 1/3 cup melted margarine + 1/2 cup Franks Red Hot Sauce (MUST be Franks) - Try this sauce if you like TRUE buffalo fingers (spicy).

Vanilla and Chocolate Delight
I used this recipe to make 2 pies instead of a 9x13 dessert and they came out beautiful!! I made them for Thanksgiving dessert and got rave reviews especially from the children! This recipe is VERY easy and definitely a keeper! I will make the PIES again for Christmas but top with mini red & green M&M's instead of the crushed chocolate crunch bar. PS: TIP on the crunch bar; put in a bag and smash on the cutting board with a mallet.
