Black Joe Cake

Needed a little something flavor wise...but definitely moist and sort of "fudgy" in texture. It was okay tasting, but like I said missing a little something. Would maybe be good with chocolate chips for added flavor.

Sugar Free Eggnog

I'd just use the soynog at stores, but its so full of sugar! I made this one with almond milk, so it wasn't quite as thick, and had a slightly nutty flavor which required quite a bit more spices and rum flavor but overall great recipe for those who can't have dairy (use soy or almond)/sugar or either.

No-Noodle Zucchini Lasagna

I loved it, the family missed their pasta, but tolerated it. I did broil the zucchini "noodles" for a few minutes to help finish drying them, as I've done this for another recipe and it seems to help!

Feta Chicken Salad

I have made this for years (via a similar recipe). It's fantastic, all alone or with crackers or raw veggies. I love the varied textures (creamy, crunchy, etc) and the flavor layers.

Grilled Bacon Jalapeno Wraps

I added a pack of ranch dressing mix to the cream cheese. With that addition this is 5 stars. Used other suggestions of picking LARGE peppers so the heat was milder (worked) and soaking in a bit of cold water after de-seeding/de-veining...

Fish Chowder

As written this recipe is 3.5-4 stars. It is a good base. However, AS IS the recipe is bland and a little "off". Once I doctored it, it was 5 stars. I noticed many (if not most) people rating with 5 stars made changes. How can you give a recipe 5 stars if you have to change it? That means the original recipe isn't a 5 star recipe...the one YOU created with changes is! *ahem, okay stepping down from soap box* LOL Anyway, I also made changes as recommended by other viewers (cooked a few slices of bacon chopped; skipped the mushrooms; cooked veggies in 1T bacon grease, 1T butter; also used fat free half and half instead of evap milk; added a LOT more OBS as well as a little cajun seasoning; used only half of the flour and instead mashed about half of the cooked potatoes with my potato masher for thickening without a goopy flour taste; and finally, garnished with fresh cut chives and that cooked, crumbled bacon...YUM). Although I did make adjustments, I still say kudos to AMYTHE for sharing this good base recipe. Thank you!

Peach Pie the Old Fashioned Two Crust Way

Okay not sure if it was something I did, or the recipe, but I followed the recipe exactly, even added the lemon juice in a colander to let extra liquid run off, and my pie still didn't set! The pie filling was all over. We let it cool a few hours before slicing so that wasn't the issue either. Not sure. Any way flavor was great though.

Bacon Cheese Frittata

Fantastic! Not only was this tasty, it's also versatile and super easy!! I did add mushrooms, chives, bell pepper, and potatoes, so I also added 3 extra eggs and cooked it in a 9 x 13 pan. Highly recommended! Yum! Oh btw, out of many picky eaters in our family of 5, ALL 5 raved over this even the child who will not ever eat anything with eggs in it!!

Like this version best...the sour cream/salsa addition at the end does make a great addition. But the fam still didn't rave. It's good, but not great. Better in tortillas tho!

Zesty Slow Cooker Chicken Barbecue

Best next day. Followed recipe exactly. We liked it, husband loved it. As for reviews saying it's watery, it is, but if you shred the chicken when it's cooked through, and let it cook a bit longer with the lid off, the chicken will soak up most of the juices.

Savory Deviled Eggs

Eh. I thought it was just me, but the family, and our 4th of July guests pretty much all felt the same way. These were simply "just okay." It wasn't bad, just didn't taste like the flavors were meant for each other.

Nobody's Strawberry Watermelon Shakedown

DELICIOUS!! And kid approved too! Had to make two minor subs bc of what I had on hand (plain coffee creamer for the cream, sweet grapefruit juice for OJ), and also added more vanilla just for our own personal taste. I did have to add a little water to get it to blend, and after adding a little at a time (may have been up to 1/4 c or so) it finally blended into a nice shake/smoothie consistency. This was fantastic. A++

Spaghetti Pie II

Thought this was good! Loved the texture and flavor of the "crust". I used real shredded parm, not the stuff in a can. Also used my own meat sauce (because I had it on hand already made). Also added more cheese on top, for our family's preference. This was a nice way to step away from the same ole same ole sketti!
