Heavenly Chocolate Mousse

Oh my GOODNESS this is to die for! This is not the knock off cool whip mixed with chocolate pudding mix that some places try to pawn off as chocolate mousse. Smooth, firm texture. A couple of tips: whip the cream in a frozen glass bowl, and use a candy thermometer to get your yolks to exactly 160, whisking often. Any higher than that and they will start to solidify and chunk up. I also mixed in crushed up heath bar bits. Next time I will try substituting coffee for the water as others have suggested.

Brownie Biscotti

Hits the spot! Had a little trouble with the slices breaking as they were being cut at first, so I let the loaves cool a few more minutes and tried the suggestion of previous reviewers to use a sharp non-serrated chef's blade, and things went more smoothly after that. Followed the recipe pretty closely, only things I did different were add the cocoa powder and sugar a little on the generous side, then dipped the finished cookies in melted chocolate.

Baked Pears

This one is in my menu rotation- a nice change from the usual vegetable with every meal. Getting my kids to eat veggies is mission impossible- but they gobble up the baked pears.

Black Bean Cigars

This had potential, but needed something. Next time I'll try substituting pepperjack cheese, a can of rotel insted of the picante, add a pkg. of taco seasoning, and enchilada sauce on top. I also thought it would be good with more tater tots.

Delicious Ham and Potato Soup

We prefer to substitute crumbled bacon for the ham, and I add a seasoning blend for a little flavor. Very forgiving recipe.

Slow Cooker Chicken Stroganoff

This is so simple, and so tasty that everyone thinks I'm a great cook! I add whole frozen chicken breasts to the crockpot, and after several hours of cooking take them out and they shred nicely. Then mix everything in together to cook a little while longer.

Throw Together Mexican Casserole

Eh, this was not bad, but neither was it really tasty- I liked the fact that it was low fat. If I tried something like this again I'd tweak it by adding way more seasonings, and add a can of Rotel.

Catherine's Spicy Chicken Soup

Adjusted this for the crockpot, and it came out nicely. Saute onion and garlic in the olive oil ,reduce the water to 1.5 cups, add a can of beer. Add all ingredients including whole chicken breasts (can be frozen or thawed) and cook on low all day, then take out chicken and shred it. Mix shredded chicken back in soup along with the sour cream, cook for a half hour on high. I also added fresh cilantro and 1.5 tsp cumin, and omitted the cans of tomato soup and whole tomatoes. Quite good topped with shredded cheese and crushed tortilla chips.

Whole Wheat Sweet Potato Muffins

These were quite tasty and healthy. I reduced the honey to 3/4 cup and they were still sweet enough. I will make them again, only next time I will add more spices as they needed just a tad more zing, and the topping made much more than I actually needed, so I'll halve that.

Fluffy Whole Wheat Biscuits

I did as others suggested and substituted olive oil for the butter. Only four stars because for some reason the dough turned out so sticky I couldn't roll them out, but they still tasted great as dropped biscuits.

Ginger Salmon

Wow! This is so simple to throw together, yet it tastes like something from an expensive restaraunt. We have tried it with fresh ginger, and then with ground ginger, and personally we prefer the ground ginger.

Roast Sticky Chicken-Rotisserie Style

WOW! This was absolutely perfect. I rubbed the spices under the skin as well, and about halfway through the baking time I sprayed it with olive oil to retain more moisture. The first words right out of my dinner guests mouth were "Is this a deli rotisserie chicken?"

Beef Tamales

Nothing wrong with this recipe at all. Very Authentic. If you are not into authentic food then you may want to spice it up a bit more, but I found this recipe to be very true to authentic mexican food. I would suggest though that you make sure you have plenty of meat on hand; I thought I had enough but ended up running out of meat after about 47 of these buggers. I think you need more than four pounds but I may have not had four pounds after the cook off. I used the beef drippings to flavor the masa and had no problems. Also, I had way too many corn husks left over, I could have done with only 1 package. I dont think you have to use multiple layers of husks to wrap these, I used only 2 layers and came out just fine.

Best Brownies

Got a chocolate craving? You won't after eating these! I made a couple of changes- I omitted the baking powder (I like my brownies chewy, not fluffy),and doubled the recipe. The frosting came out nicely, however I did have to add a splash of milk otherwise it would have been concrete. These are best when they are fresh, after a couple of days in the fridge they aren't too good.
