Baked Spaghetti

Delicious! This tasted like lasagna without all the work. I did not line my pan with foil, just used cooking spray, and I didn't have any trouble. I also put a little sauce on the bottom of the pan so the spaghetti wouldn't dry out.

Chocolate Zucchini Muffins

Delicious! My family didn't even know there was zucchini in it. They were very moist. I did not add the spices, because I personally don't like spices mixed with chocolate. The muffins tasted great without them.

Special Pork Tenderloin

Delicious! It was easy to make and looked (and smelled) wonderful. My kids and husband thought it was good too. I used seasoned salt and garlic and onion powder mixed with the flour because I didn't have garlic.

Cheese Garlic Biscuits II

These biscuits were ok. They were bland. This might be because I didn't put the butter and minced garlic on top (I didn't think my kids would like that). I did put garlic powder in the biscuits though. I couldn't really taste the cheese and I used sharp chedder.

Blueberry-Orange Muffins

Pretty good. They were tasty, but dry. We really couldn't taste the orange, but then I didn't use the orange rind. I used frozen blueberries instead.

Buttermilk Coffee Cake

It was ok. I've had much better coffee cakes. I picked this one to use up leftover buttermilk. The topping was dry and fell off when cutting into it. Maybe because it didn't have any butter in it? I did not use pecans, but substituted 1/3 cup of oatmeal, but the oatmeal was very dry. I used an 8x8 square pan and cooked it 15-20 minutes longer.

Strawberry Muffins

These were ok. They were bland. I used frozen strawberries, so maybe fresh ones would be more flavorful... I did throw in a few blueberries. As others had stated, they do not brown. I got 10 muffins instead of 8 too.

Peachy Moist Muffins

Delicious! The batter was very thick, but they turned out good. They are a dense muffin, but they have a great flavor, especially if you use peach yogurt. I skipped the nuts. I did use frozen peaches.

Butter Icing for Sugar Cookies

Good and easy. I used 1 tsp. of vanilla instead (like others had suggested). I used just a little milk to make the frosting thicker because I used this for sandwich cookies.

Fruit and Nut Slaw

Pretty good. I liked how it used orange yogurt for a different kind of slaw. I didn't use the pineapple juice. I think this helped not to be so runny as others had complained about. I also used orange juice instead of lemon juice. Allergic to nuts, so skipped it. I did add a dash of vinegar for a little tang.

Chocolate Marshmallow Frosting

Easy and yummy! I didn't have any unsweetened chocolate, so I did the 3 tbsp. of cocoa + 1 tbsp. of oil = 1 ounce of unsweetened chocolate method. I used marshmallow fluff and 2% milk instead. It was delicious on brownies.

Pumpkin Chocolate Chip Muffins

Delicious! The pumpkin flavor is not overwhelming. My kids even liked them. I used regular chocolate chips and they sunk to the bottom, so miniature chips would probably work better the next time I make them.

Beth's Peach-Nectarine Muffins

Pretty good. The muffins were moist and the brown sugar melted nicely on top. I didn't think they had a lot of flavor though, but I only used nectarines. Unique recipe.
